Avocado and Egg English Muffin


My new favorite breakfast!

This morning I have a dentist appointment later in the am, so I’m going straight from my house there, instead of going in to the office for less than an hour and either accomplishing nothing or getting pulled into something that will make me late for the appointment.  So I had a nice relaxing morning here at home and my incredibly studly husband (who had gotten up at 5:30 am to start working),by the time I was out of the shower and dressed, had made me coffee in the french press, had eggs poaching on the stove, and had a couple of my homemade english muffins ready to be toasted. I know.  He’s a keeper.


He toasted the english muffins in the oven under the broiler and I sliced open a super ripe avocado while the eggs finished poaching.


A few slices of avocado on top of the english muffin, topped with a poached egg, some fresh cracked pepper and some salt, and what a wonderfully balanced and nutritious breakfast!! Dan made his into a sandwich but I wasn’t about to have him wait for me to take a picture, the man just made me coffee and breakfast. On a Wed. For no reason. I love him.


What a delicious way to start the day!
