If you're any or all of these, then I've got you with our easy, quick sweet bread recipe for Butterscotch Snickerdoodle Bread! It's sweet - but not too sweet, it has a snickerdoodle like crust, and just the right amount of butterscotch chips to give a little pop of flavor in each slice. It's a snickerdoodle bread that's a delicious sweet treat!
What is a Quick Bread?
Quick bread is non-yeasted bread that has a texture more closely related to a muffin. They can be savory or sweet and can be made in so many ways! From Banana Breads to Zucchini Breads to Cornbread, scones, muffins, and (one of our favorites) Irish Soda Bread, all of these are a form of quick bread. Quick breads don't require any special equipment and can be made in loaf pans, cast iron skillets, or even just a sheet pan. Because they just use baking soda or baking powder as the leavening agent, this means that there's no yeast to proof, and even better, no dough to knead! Quicker, easier, and oh sooo endlessly customizable!
Ingredients Needed
- Flour - All-purpose flour is best for this one. You can use gluten-free flour, but just be sure it's a 1:1 like Bob's Red Mill.
- Butter and Sugars - We use a combo of white and brown sugar to add a depth of flavor and is then creamed with the butter to create that tender texture on the inside.
- Butterscotch Chips - We love the kiss of butterscotch flavor these add, but you could also lean even heavier into the snickerdoodle flavor and add some cinnamon chips to this snickerdoodle bread!
- Sour Cream - This helps add some moisture to the sweet bread and a little tangy flavor that's key for that snickerdoodle flavor.
- Eggs - These help add structure and bind all of the ingredients together.
- Baking Powder - The leavening agent of this quick bread.
- Cinnamon and Cream of Tartar - Two key ingredients to snickerdoodles!
- Vanilla Extract and Salt - Just a touch of each, by the way, have you made your own vanilla extract, yet?
Easy to Make
Quick sweet breads are just that because of how easily they come together! For this recipe it's just a matter of creaming the butter and sugars, add the eggs, sour cream, and vanilla, flour mixed with the other dry ingredients, and then finish with a fold of the butterscotch chips.
Bake!
Add that sticky dough to a parchment paper-lined loaf pan, sprinkle with some cinnamon and sugar, and bake!

Quick Bread Baking Tips
The number one tip for when you're making quick bread (just like muffins) is to not overmix your dough. This will make your sweet bread dense and tough. Just make sure that all of the dry ingredients are incorporated and if there are some lumps, that's ok. The point is that you don't overwork the gluten which will make your bread tough or chewy.
Quick bread dough is not one that you want to prep ahead and let sit out while you pre-heat the oven, otherwise, your bread may be soggy in the middle.
Use a sharp knife or a little cake tester to test your sweet bread in the center to make sure that it's cooked all of the way through before removing it from the oven.
While it's always very tempting to cut into that delicious-smelling bread once it comes out of the oven, make sure to let it cool before giving it a slice so that it doesn't immediately crumble when you cut into it instead of the nice clean slices that you expect from a sweet bread.
Definitely! We use an extra large loaf pan for one big loaf, but you can absolutely make this in smaller loaf pans or even as muffins! It will make 2 dozen muffins.
We prefer to use parchment paper over greasing the loaf pan because we find that it helps prevent the bottom of the loaf from getting too browned while the center fully cooks.

Butterscotch Snickerdoodle Bread
Equipment
- 9 X 5 loaf pan
- parchment paper
Ingredients
- 2½ cups flour 336 g
- 2 teaspoons baking powder 9 g
- ½ tsp. salt 3 g
- 1 tablespoon cinnamon 6 g
- 1 cup butter softened
- 1/2 cup sugar 113 g
- 1/2 cup brown sugar packed, 122 g
- 3 eggs room temperature
- 1 teaspoon vanilla extract
- ¾ cup sour cream 170 g
- 1 cup cup butterscotch chips 6 oz
Topping
- 2 teaspoons sugar
- 2 teaspoons cinnamon
Instructions
- Prep: Preheat the oven to 350 degrees and line loaf pan(s) with parchment paper. In a small bowl, mix the sugar and cinnamon for the topping and set aside.
- Cream Butter and Sugars: Add sugars and butter to a large bowl and cream with a hand mixer until all is incorporated and fluffy. Add eggs one at a time, mix, and then add vanilla and sour cream and mix well until combined.
- Mix Dry Ingredients: In a medium-sized bowl, add flour, cinnamon, salt, and baking powder and mix well.
- Create Dough: Add half of the flour mixture to the creamed butter and sugars and give a couple of mixes with a spatula. Add the rest of the flour to the dough a give another few mixes, just so that all of the flour is incorporated, but it's ok if a few lumps remain, you don't want to overmix the dough. Fold in butterscotch chips.
- Bake: Add dough to your loaf pan(s) and smooth out the top with your spatula. Sprinkle with cinnamon and sugar topping. Add to oven and bake for 60-70 minutes (or 30-40 minutes for mini pans). Check for doneness using a sharp knife or cake tester by inserting it into the center of the loaf. It will be done when it pulls clean.Let cool completely before removing the bread from the pan and slicing. Enjoy!

This bread was super tasty! The only change I made was to add some toasted chopped pecans into the batter, which I would definitely do again. It didn't really rise well, though, which is why I just gave it 4 stars. Otherwise, though, this will be a favorite in my recipe box!

The topping says 3 tablespoons of sugar and 3 teaspoons of cinnamon, however under instructions, it reads 3 tablespoons of sugar and 3 tablespoons of cinnamon. I hope the latter is correct as the loaves are in the oven and I hope the cinnamon isn't too much. I may have to scoop some off. It smells good, though! I made for my father-in-law's birthday. He likes anything butterscotch. ?
