Prosciutto and Fried Egg Grilled Cheese


I’m starting to feel like a software programmer widow. Which isn’t nearly as bad as how Dan feels right now.  He pulled his 3rd all-nighter since starting with this company in Oct.  And by all-nighter, I totally mean he went back to work after dinner and worked through the night without sleep. In. Sane.  The only consolation to this insanity: his work dedication on top of his skill sets and the industry he’s in will mean he will always have a job. Ideally a very well paying job.  Until then, all I can really do to help him through this ridiculousness, is make sure he’s well fed.  And after being up all night, he needed a solid breakfast.


So I sliced off a couple of pieces of his latest sourdough bread, buttered one side of each, topped them with a few hearty slices from a brick of Tillamook cheddar, and put them in a pan on the stove top.


After a few minutes on the pan, so that the buttered sides were toasted and buttery, I put them cheese up on a baking sheet and under the broiler to finish melting the cheese. Then I added a few slices of leftover prosciutto from our Prosciutto and Arugula Pizza.


A couple of fried eggs…


…and damn.

IMG_0774.CR2Now that’s a breakfast grilled cheese. Being up for 24 hrs and working for about 20 of them sucked a little less with this sandwich!
