Radish Ricotta Crostini
Brighten up some radishes with fresh ricotta on a crostini

Ingredients
  1. 4 radishes, sliced very very thin
  2. 1/4 cup of ricotta cheese
  3. 8 baguette slices
  4. salt and pepper to taste
  5. olive oil to brush
  6. 1 garlic clove, small piece sliced off
Instructions
  1. Pre-heat oven to 350 degrees.
  2. Line baking sheet with baguette slices. Brush lightly with olive oil. Bake for 10-12 minutes.
  3. When slightly toasted, remove from oven and then rub the garlic on the crostini so that it picks up some garlic essence.
  4. Top crostini with a teaspoon or two of ricotta, then top with a few ricotta slices.
  5. Sprinkle with salt and pepper and serve.

Ingredients
  1. 4 beets, cleaned and chopped into small bite sized pieces
  2. 1/4 cup of feta cheese
  3. 8 baguette slices
  4. 1/2 tablespoon of olive oil + more for brushing
  5. 1 teaspoon of fresh minced thyme
  6. salt and pepper to taste
Instructions
  1. Pre-heat oven to 400 degrees.
  2. Toss chopped beets in 1/2 tablespoon of olive oil. Sprinkle with salt and mix well in a baking dish.
  3. Bake for 30-40 minutes until beets are fork tender.
  4. Let beets cool. While they're cooling, lower oven temp. to 350 degrees. Line baking sheet with baguette slices and brush with olive oil. Bake for 10-12 minutes until lightly toasted.
  5. When beets are cooled, mix beets with feta. Top baguette slices with beets and feta, sprinkle with thyme and fresh ground pepper.
