Spinach and Feta Toast

Homemade rye bread, toasted and topped with sauteed spinach and From Scratch Feta cheese!After the excitement of our new homemade feta, I just had to use it in my breakfast this weekend. I had all these plans of the beautiful, elaborate dish I was going to make highlighting my beautiful cheese.  But, being that I may have been just a teensy-bit hungover from a cocktail contest Fall party the night before, those plans quickly went out the window.  Although it started out as a classy party with high end mixed drinks and a beautiful dinner, after the 8 cocktails that were entered into the contest (we all just ‘sampled’ each) somehow by 3 am we were all in the garage letting our competitive sides come out over the notoriously dangerous solo cups and ping pong balls (shudder)… Needless to say, I needed an alcohol absorbing hangover breakfast.IMG_6937So, I sliced off a piece of my homemade marble rye bread,IMG_6938Then sauteed up some garlic and onion with some spinach and plenty of salt and pepper.IMG_6947And grabbed a piece of our fresh feta… mmm so crumbly and delicious!IMG_6954And since I’ve had such a hard time poaching pretty eggs, I finally broke down and bought these little silicone egg poachers in an attempt to finally poach some picture perfect eggs; attempt being the operative word here.Homemade rye bread, toasted and topped with sauteed spinach and From Scratch Feta cheese!In the meantime, I loaded my perfectly toasted little piece of rye with the sauteed spinach and some crumbled feta.  Good enough to eat just like this.  But in order to complete the full hangover breakfast, I had to add a couple of eggs with a super runny yolk.IMG_6956…Which despite my new little egg poachers, still did not come out very pretty. I think I just need to face the fact that I am not an egg poacher. I mean maybe, just maybe they came out like this because my head was pounding and I could barely stand up straight because my poor alcohol soaked body just naturally wanted to be in the fetal position… Perhaps that’s why these eggs came out so poorly even with the aid of the little silicone cups. But I think the former is more accurate than the latter.  Anyway, despite it being pretty hideous, it was the absolute best hangover breakfast.  Hangover cure? Not so much.  I was pretty useless for the rest of the day, but at least I had a settled and happy belly!

Spinach and Feta Toast

Ingredients
  1. 1 piece of rye or other fresh bread
  2. 2 eggs
  3. 1/2 bunch of spinach, cleaned
  4. 2 garlic cloves, minced
  5. 1/2 white onion, diced
  6. 1/2 oz of feta
  7. olive oil
  8. plenty of salt and pepper to taste
Instructions
  1. Put a pot of water on stove top to boil for poached eggs or heat pan if frying eggs.
  2. Heat oil in skillet.  Add garlic and onion and saute for a couple of minutes. Add spinach and saute until wilted. Salt and pepper generously to taste.
  3. Toast bread and poach or fry eggs or cook them however you like.
  4. Top toasted bread with spinach and crumbled feta.  Then top with eggs, salt and pepper more if desired.

  • Oh, hello. So ever since you posted your recipes for ridiculously delicious mounds of feta cheese.. I’ve been eating it NON STOP. I’m eating some right NOW!!! I’ve been eating it every day since you posted it… and not just a little bit either. A LOT BIT. And I’m already planning my next meal with it… (a greek omelette… YUP) And now I’m adding this to the list….. daaaahhhh! Oh, and for the record..you… make a GREAT poached egg! With or without that device! So there : )
