Ingredients

  • 4 cups cooked, brown rice
  • 2 eggs whisked
  • 2 1/2 tablespoons salted butter divided
  • 1 cup diced carrot
  • 1 cup peas (fresh or frozen)
  • 4 cloves garlic, minced
  • 1/2 white onion, diced
  • 1/4 cup diced scallions
  • 4 tablespoons soy sauce
  • 2 teaspoons oyster sauce
  • fresh ground pepper to taste

Instructions

  1. Heat a 1/2 tablespoon of butter in a large saute pan over medium high heat and scrambled the eggs into small pieces.  Remove from pan and set aside.

  2. Heat another tablespoon of butter in pan over medium high heat and add garlic, onion, carrots, and pepper.  Stir frequently, saute 3 minutes and then add peas and saute another 2 minutes.

  3. Add final tablespoon to pan, turn up heat slightly, add rice, and stir.  Add scallions, soy, and oyster sauce and saute for another 3-5 minutes to 'fry' rice.  Add egg, mix and serve immediately.  Garnish with additional scallions if desired.

  • I never thought to use diced carrot in stir fry. Carrots give such a nice color and probably a good ‘bite’. Your recipe looks amazing, I am going to have to try your version. Glad you are feeling better, hope all is well.

  • When I’m eating rice, fried rice is the ultimate in comfort foods! Sorry to hear you were sick, I do find rice is one of the only things I can stomach when I’m ill. This looks quick and easy, perfect for family dinners. Thanks!

  • This looks like such a quick and convenient dinner for a busy night. I love making takeout inspired meals at home. So much healthier than ordering, as you can control all of the ingredients that go into it. Loving that you used brown rice in this as well! Can’t wait to give this recipe a try.

  • I LOVE a good fried rice, it is such a satisfying meal. I usually cook a double batch of rice and free freeze some and the pour into the pan from frozen. It is the spring onions which make it – fried rice simple isn’t fried rice without them.

  • I love fried rice, and this sounds like such a great lightened up version! The oyster sauce sounds so interesting in this, and I have never cooked with it, so I love the idea of trying this out. I can’t wait to make this, thanks for the great recipe!
