Thank Yous


I haven’t cooked at all this week.  We’ve been eating out, eating left overs, and also kind of not eating well.  Our sweet boy is still sick, we don’t know why, he’s going to see an internal medicine specialist of Friday, and as a result, the vacation I’ve been planning to celebrate my graduation with 10 of our friends in Beaver Creek, CO… we can’t go on.  I’m heartbroken.  Not only for the uncertainty of Nigel’s health, but also because this vacation I started planning Oct. of last year to celebrate the past 11 years I’ve been in school, will not be happening for the Koslicki Family.

So in an attempt to try to not think about all of those things, I instead this morning decided to focus on something else that makes me happy and warms my heart.  This blog started out as just a project that would encourage Dan and I cook from scratch and also act as Dan says, “a digital cookbook”.  Having never blogged before besides a travel blog when I was in Italy, which was really just a way for my friends and family to keep up with what I was doing, I had no idea there was such a huge blogging community.  Of course I knew there are like a zillion blogs out there, 3/4 of which seem to be food blogs, but I had no idea how supportive and sweet all these other bloggers were/are!

Having started this blog about 6 months ago, I’ve not only been introduced to so many amazing food blogs through the gracious Angie’s Fiesta Friday, but I’ve also been nominated for some blog awards that I haven’t participated in.  Why? I don’t remember / have a good answer.  But just because I didn’t participate, does not mean I don’t greatly appreciate the gesture from these wonderful bloggers.  And so I want to personally thank each and every one of you.

Ngan, @ Ngan Made it – thank you for nominating me for the Sunshine Award!   Thank you also for sharing your amazing Macaroons , which I made and LOVED.  Also, your pictures are always so incredibly delicious, stories lovely, and you’ve always had kind words for everyone!  I cannot wait to try your quick Cucumber Kimchi!

Frankie @ Frankie’s Feast – thank you for nominating me for the Sunshine Award and the Leibster Award.  When it comes to gluten free food, whoa we’ve come a long way.  And Frankie’s blog sure is evidence of this.  Although our family isn’t gluten free, I’ve found myself befriending a few people who are and cooking for them has been a super fun challenge.  So thank you Frankie for your take on some scrumptious gluten free recipes that make you not even know you’re missing gluten!

Tina @ Mademoiselle Gorumande – Thank you for your invitation to join the Writing Blog Process Tour.  What a fun tour that introduced so many to everyone’s writing styles, thought processes, and upcoming projects!  Your love for travel and food is so evident in your cooking and beautiful posts that make you a true Gourmande!

Craftea Heart – Thank you for also including me in the Writing Blog Process Tour!  Your pictures of food, the outdoors, and your crafts are amazing!  Being a not so crafty person myself, I’m always in awe at how those who are, like yourself, are so creative!

I hope I didn’t miss anyone!  Thank you thank you thank you again to all of your wonderful bloggers out there.  Like I said, the support and encouragement from you all has truly been an unexpected but wonderful result from starting this blog.  Grazie mille, i miei amici!  xoxo

    And I do hope that your little one gets better soon. Truly understandable that you are not really in the mood for cooking anything, let alone take fotos and post it.
    All the best to you and your son! So sad that you cannot go on the vacation celebration as well. Keep going though, better times ahead! 🙂

  • Oh my gosh I can’t believe it…I am SO sorry that you can’t take your vacation, you’ve just broken MY heart…… But what an amazing thing, when things are so rough for you right now … instead of being bitter and mad at the world, you spend the time being positive and THANKING people!!!! THAT’S impressive- wow. I hope your little baby boy gets better soon and that you get some answers, and that after it’s all fixed you can go on an amazing and well deserved vacation somewhere : ( Way to keep your head up, and thanks for the THANKS!   • So sorry to hear about the cancelled vacation. Hopefully all will go well with the internal medicine doc. Our dog was recently diagnosed with Addison’s disease so we have been through all the vet visits too. She just had her meds readjusted again since her blood levels were still off. That translates to even more of our monthly budget going to her, but it is worth it! The boys would be lost without her. Maybe more budget meal posts?!

    • Thank you- and I’m so sorry to hear about your pup! It’s so hard when they can’t tell you what hurts and what’s wrong 🙁 I hope she’s doing better and yes, our four legged children are sooo worth it. A budget meals, what a great idea! Especially since Nigel’s health insurance isn’t covering any of this… oy

  • I’m so sad to hear Nigel is still sick, Tracy. I hope you can find out what’s wrong soon. So sorry that you won’t be able to make your trip to celebrate graduation. (Perhaps it will only mean that it’s postponed rather than cancelled forever?) Such lovely photos and thank you for all the kindness you’ve shown me. What’s the point of a blogging community if we can’t support each other? I wonder if other bloggers are as lucky as we are to have something like Fiesta Friday? I feel quite lucky to have met you here.

I hope the specialist will be able to get to the bottom of what's been ailing him.
