Ahhh appetite. It’s so nice to see you again. It’s been a brutal winter and it doesn’t help that I work in healthcare and am in and out of hospitals and nursing facilities all week. Three of which ended up being put on quarantine for outbreaks of the flu or various nasty stomach viruses. So no wonder I’ve had two bad respiratory viruses and two stomach viruses this winter. The latter resulting in a diet that resembled the boiled chicken, rice, and yogurt diet we feed our dog when he’s sick. So when I was finally feeling normal enough again for real food, I (and the baby) wanted it all. Like enchiladas. And tacos. Being the hungry preggo I am, made “both”: Crock Pot Chicken Enchilada Tacos!
Summerrrrrr! I know you’re out there. We saw a glimmer of it in May, but lately it’s been cool and drizzly and much more Spring like than summer. No matter, in this household there is no grilling “season.” You’ll find my husband next to the grill in the snow, sleet, rain, wind, hurricane, tornado, tsunami, zombie apocalypse… Man loves his grill. And I love giving him all the things to grill, like this new Grilled Cilantro Lime Chicken!

You guys already know how much we love chicken dinners in this house. But usually it’s either thrown in the trusty Crock Pot or baked. I have no idea why, but for some reason we hardly ever braise it… until now. This Green Bean and Mushroom Braised Chicken has seriously upped our chicken dinner game!
1. Dear Crock Pot, I love you. 2. Sometimes, I look back on our lives about 5 months ago and think about when I said we were “so busy,” and laugh and say, “Ooh you silly silly kids.” Needless to say, having a baby drastically alters your concept of the word “busy.” In addition to the adorable little human who eats, poops, and drools all of the time, throw in a couple of Daycare plagues (seriously I had no idea what a little cesspool daycare would be…), buying a house, and packing? Yup, that’s our lives right now. Busy for sure so exciting! Our new house is quite literally twice the size of our house now, and AND ohmygodohmygod not just one real adult sized refrigerator, but TWO (an extra storage fridge/freezer in the garage)! I’m so happy I could cry. But that could also be because I’m so tired, too 😉
Have I mentioned how “Quick and Easy” is the theme in our house for dinner, lately? I loved our Crock Pot before, but now, oh now, it’s a life saver. Chicken and garlic: two ingredients you will invariably find in our kitchen.
