You know what tastes better than any jar and is super easy to manipulate and adjust to your own taste? Pizza sauce. So. Easy. Especially if you have homemade tomato paste. If you don’t, then no worries, canned tomato paste works too!
Basic ingredients for a pizza sauce, tomato sauce/paste, sweetness, saltiness, and herbs. I use oregano, marjoram, onion salt, minced garlic, pepper, sea salt, and a little honey and brown sugar. I’ve used garlic powder/salts, anchovy paste, parsley, basil, thyme, parm cheese, too… it all depends what flavors you like! But basic needs: tomatoes, with a touch or salt, sweet, and herbs.
So the first thing I did was thin the paste to a sauce. This particular paste wasn’t uber thick, so I only added a little water then mixed it up to make it thinner. If you use a tomato paste from a can, I usually use a full can of water.
My favorite thing about from scratch condiment bases? Mixing them right in the mason jar. I added a decent pinch of each. A little more oregano and onion powder than the others just because those are the flavors we like. Remember, dried herbs are much stronger than fresh too if you are lucky enough to have all the fresh ones around.
Then I added a couple of minced garlic cloves. Fresh garlic > any other garlic. I don’t think we make many things without garlic. I also don’t think I could have ever married a man who didn’t love the flavor of garlic as much as I do.
Then the sweet components. A touch of honey and a good sized pinch of dark brown sugar. I’ve used white sugar before too, but I just like the flavor of dark better. Especially with honey. We used a really nice clove honey from Winter Park, CO that my MOH and her hubby gave us in a sweet CO Farmers Market basket for our wedding. LOVE that stuff.
Omg. How could I forgot the kick?! We always add red pepper flakes to our sauce too for a touch of heat.
Mixed well and boom. Pizza sauce! So. stinkin. easy.
- Tomato paste (homemade or canned) thinned with water
- oregano to taste
- onion powder to taste
- fresh minced garlic
- sea salt to taste
- honey… to taste
- brown sugar. Yup. To taste. Get the drift?
- ground black pepper
- red pepper flakes
Mix and let sit for however long you have before you want to make pizza (over night is best, but I usually don’t think that far ahead).
Other additions: anchovy paste, grated parm cheese, thyme, dried basil, parsley, garlic salt, white sugar.
