Honey is NOT vegan. Don’t call these Vegan If you put honey in them or tell people they can. Thanks.

Hi Johanna, in case you missed it, the ingredient in the picture and listed first in the recipe is Agave. Honey is listed as another option, but to avoid any possible confusion, I’ve updated it with that note. Thanks for letting me know! Have a great day!

I found this recipe to be extremely sticky, so much so that my food processor could barely blend the mixture without it balling up. Did you process the cashews before adding the dates? Or any other suggestions? Thanks!

Hi Hope! Yes, the dough should be very very tacky and will ball up a little. You want that stickiness when you roll them into balls - that's what makes the coconut stick!

Hadn't eaten energy balls for yeaaaaars. Had all the necessary ingredients by chance so gave it a try and LOVED IT. Will do again ASAP.
First time trying energy balls with cashew nuts (hard to come by where I live, SO expensive), but totally worth it.

I love these! Instead of syrup I added 1 tbs of vanilla Nutpods. And for a bit of fat and protein I also added 1 Tbs of almond butter.

I love these no-bake, no-cook bliss/ energy balls. I've tried it with roasted nuts but never with just cashews. I am sure they must have tasted amazing.

    Hi!

I love the sound of these! I make my own cashew milk at home and I was wondering whether these might work with the cashew pulp rather than the whole cashew in the mix? What do you think? I hate wasting food!!

Hi Rosie! Ooooh what a GREAT question!! Hmmm... having never made my own cashew milk, I'm not familiar with how thick the pulp is. It's questionable since the cashews are really the main base of the ball, aside from the dates. I'd first try a 1/4 pulp to whole cashew ratio first and see how that works. I'm really intrigued though so please let me know how it works out! 😀

Yes! I love this recipe. Bites are my favorite and I need to make some- it's been too long. I also have trouble finding unsweetned coconut where we live so I usually order it online.

I'm going to try to make these for my Mom! She is gluten lactose intolerant. I have been having trouble finding unsweetened coconut. I looked again last week. Do you thin sweetened coconut would be ok, or will it be too sweet?

Hey Beth! That's great! Sweetened coconut shouldn't be too sweet, although if she likes things a little less sweet maybe try using coconut oil instead of agave to cut down the sweetness there. Also, if you're an Amazon Prime user, Bob's Red Mill is a great option - http://www.amazon.com/Bobs-Red-Mill-Shredded-Unsweetened/dp/B002YR7A9Q . I go to Amazon for all the things I can't find locally in stores 🙂 I hope your mom enjoys them!
