10 Minute Spinach & Feta

Breakfast Quesadilla

Our 10 Minute Spinach and Feta Breakfast Quesadilla recipe is a new favorite in our house not only because it's ready in no time, but it's also packed full of healthy spinach, eggs and cheese.

INGREDIENTS

Olive Oil | Spinach | Garlic Powder Onion Powder | Eggs | Feta Tortillas | Mozzarella | Salt & Pepper

Cook spinach with garlic powder and onion powder. Saute for 1 minute until spinach begins to wilt.

Scramble eggs in the pan with the spinach until  cooked. Top with feta, give a quick stir to combine, and remove from pan.

Add flour tortilla. Sprinkle 1/2 of the mozzarella on one side, top with egg, spinach & feta, and top with the remaining cheese. Fold over.

Let cook until the tortilla is nice and crispy and the cheese is melted. Flip and cook on the other side, again, until the tortilla is lightly browned and crispy.

So  crispy.  So cheesey.
