Bacon Spinach  & Feta

A delicious and hearty breakfast casserole that's great any time of the day, and to make in advance!


Bread | Spinach | Onion | Garlic  Butter | Eggs | Mustard | Salt  Pepper | Feta | Parmesan  Half & Half | Milk

Melt butter.  Add onion & garlic - saute until soft. Add spinach and stir until cooked and wilted, approximately 2 min. Remove from heat and set aside.

Cook the bacon in a separate pan until browned and fat rendered.  In a bowl whisk all of the eggs, milk, cream, salt, pepper & ground mustard.

Grease the pan then Layer: cubed bread, spinach, onions, bacon, feta and Parmesan. Pour the egg mixture over the top. Cover and store in fridge for at least an hour and up to 24hrs.

Let the dish sit at room temp for 15-20 minutes. Baked covered lightly with foil for 30 min. Remove foil and bake for another 25 min. – Enjoy!
