Chickpea & Spinach

This Chickpea and Spinach Curry is our version of chana masala, a spiced chickpea dish packed full of flavor!

INGREDIENTS

Olive Oil | Onion | Garlic | Jalapeno Ginger | Garam Masala | Tumeric Chili Powder | Salt & Pepper Chickpeas | Tomatoes | Coconut Milk Spinach | Cilantro | Lemon Juice

Add onions to a hot pan, saute for 4-5 min, stirring. Mix salt, pepper, garam masala, turmeric & chili powder.   Prep coconut milk, tomatoes, and chickpeas and set aside.

Add garlic, ginger & jalapeno to onions, stir, and cook for a min. Add spices, and coat onions & garlic. Cook about 60-90 sec. Add chickpeas, tomatoes, and coconut milk and mix.

Turn down to medium low, cover and let cook for 10 minutes, stirring often. Add fresh spinach, half at a time, mixing it with chickpeas before adding the rest. Stir frequently until wilted.

Finish with 2 teaspoons of lemon juice and fresh cilantro. Serve over rice or garlic naan.
