Create Corn Syrup Sub Whisk sugar, cream of tartar, and water over heat, until the sugar is dissolved. Turn the heat to medium, continue to whisk. Bring to a boil and then to a simmer to thicken into a syrup.
Add More Sugar Add sugar and water, then reduce heat, and whisk so that the new sugar dissolves as it is all brought to a boil. Reduce to a gentle boil.
Finish Brittle Working quickly, add butter and baking soda, stir until the butter has melted. Immediately stir in the peanuts. Quickly pour onto parchment paper and spread into an even layer.
Let Cool Set baking sheet aside in a cool dry place to cool and set. Once set, crack into desired pieces.
