Fresh Beets | Water | Sugar Garlic | Whole Peppercorns Apple Cider Vinegar
Prepare Beets Peel and chop the beets, then boil them until they are fork tender.
Pickling Liquid Add water, vinegar, sugar, and salt to a saucepan and bring to a simmer, stirring until all the sugar is dissolved.
Fill Jars Fill mason jars with the beets and add peppercorns and garlic. Then add the pickling liquid, covering the beets completely.
Chill Cover and let the beets chill in the fridge for 1 hour, then use as a snack, side, salad or sandwich topper!
