Make Ham Stock Boil ham bone and ham grease in water with whatever veggie scraps you have. Then turn down to simmer until you have a lovely rich stock.
Caramelize Onions Sauté sliced onions with garlic and butter slowly on medium stirring often, and cooking for about 10 minutes. Let them caramelize and only stir every few minutes until caramelized.
Assemble Soup Add ham stock to onions and heat. Fill soup crocks with onions and broth, add fresh sliced bread, and top with cheese. Put crocks on baking sheet and broil until the cheese is melted and slightly browned.
Serve immediately and ENJOY!
