It's your favorite Mexican street corn on the cob, but cut into much less messy, grabbable, fun, Mexican Corn Ribs! These vegetarian and gluten-free corn "riblets" are the perfect way to use that fresh summer corn!

INGREDIENTS

Corn | Mayonnaise | Sour Cream Jalapeno | Lime Juice | Cumin Paprika | Chili Powder | Cotija Cheese Salt | Fresh Cilantro

Prep the Corn With a sharp knife, trim the ends, score in the middle and gently break in half. Then cut each half into quarters.

Prep the Seasoning Mix all the spices together and in a separate bowl, combine mayonnaise, sour cream, lime juice, and jalapeno.

Grill Corn Brush the ribs with oil and sprinkle on some of the seasoning. Grill cut side down for about 8 minutes, then flip over and cook for another 6-8 minutes.

Add Topping Brush on the cream mixture, sprinkle with cheese, and top with fresh cilantro.
