Peel, boil & mash sweet potatoes. Set aside 1/2 cup.
Line a baking sheet with parchment paper and spread with panko bread crumbs.
Give a quick spay with a misto. Bake until browned.
With your hands gather a small amount of ground chicken, shape it into an oval shape and gently dip into the panko bread crumbs and coat fully.
Line them on parchment paper lined baking sheets.
