corn ribs


It's your favorite Mexican street corn on the cob, but cut into much less messy, grabbable, fun,  Mexican Corn Ribs!


Fresh Corn | Mayonnaise | Sour Cream | Jalapeno | Lime Juice Cumin | Paprika | Chili Powder Salt | Cotija Cheese | Cilantro

Cut off the ends of the corn cobs.  Use knife to score, break in half. Rock the knife back and forth to slowly cut through the center of the core. Gently cut in half again,  through the kernels.

 Once your ears are prepped, mix the spices. In a different bowl, add mayonnaise, sour cream, lime juice, and jalapeno  and mix well.

Oil each rib and cover in seasoning mix. Lay on hot grill cut side down cook for 8-10 min.  Flip, cook for another 6-8 min.

Transfer the ribs back to the tray. Brush on cream mixture, sprinkle with cheese, and top with fresh cilantro.

Perfectly grabbable. Perfectly spiced. Creamy and cheesy.
