Miso Spinach and Mushroom

Soba Noodles

Dinner in just 15 minutes! Our Miso Spinach and Mushroom Soba Noodles are an umami flavor-packed, vegetarian, gluten-free meal that is delicious, nutritious, and so incredibly easy to make!

INGREDIENTS

Soba Noodles | Spinach | Mushrooms Sesame Oil | Garlic | Miso Paste Rice Vinegar | Soy Sauce | Peanuts Scallions | Sesame Seeds

Start a pot of water for the soba noodles. Do not add salt. Add sliced mushrooms to hot skillet with oil - saute for 5-6 minutes stirring often.

Mix miso, vinegar, remaining sesame oil & soy sauce. Whisk until smooth. Add garlic to mushrooms and saute for another minute.

Cook & drain soba noodles. Add half of the spinach, to the mushrooms. Once wilted, add the second half. Once it has all wilted add the miso sauce and stir well.

Add noodles, a handful at a time. Mix to combine fully. Top with scallions, peanuts, and sesame seeds.
