First Shred the carrot and then take some of the moisture out using paper towels.
Next Mix flour and spices in a bowl.
Mix Together Cream butter & sugar, add egg, maple, vanilla, and applesauce. Then add the flour and spice mixture and continue to mix. Mix in the carrots and oats.
Finish Up! Add balls of dough to parchment lined baking sheets. Bake for 10 minutes in a pre-heated oven. Mix together cream cheese frosting and add when cookies are cooled.
