This Panko Parmesan Zucchini Fritters recipe is easy to make, healthy, and the perfect way to use those garden-fresh zucchini!


Zucchini | Salt | Garlic | Parmesan Onion Powder | Garlic Powder Oregano | Pepper | Olive Oil

Shred zucchini, place in a colander and sprinkle with kosher salt.  Let sit for 10 minutes to sweat excess moisture.  Squeeze out the remaining moisture.

Move zucchini to a large bowl and add remaining ingredients. Mix well.

Scoop batter into your palm and form into a patty, add to hot pan. Cook on each side for 2-4 minutes until batter begins to brown slightly.

Your new favorite appetizer.
