Lettuce Wraps

These Shrimp Ceviche Lettuce Wraps are everything you love about Peruvian ceviche, healthy, no cooking required, and gluten-free. They make for a perfect appetizer or light, easy meal!

INGREDIENTS

Raw Shrimp | Lime Juice | Cucumber Tomato | Cilantro | Onion | Jalapeno Lettuce | Avocado | Salt

Chop shrimp into small pieces, then cover in lime juice. Cover and set it aside in the fridge  for at least 15 minutes.

Chop cucumber, tomatoes, onions, cilantro & jalapeno. Trim and wash lettuce and set aside.  Check the shrimp. Ensure that it is "cooked" and no longer gray and is instead pink and translucent.

Add veggies and mix well. Season with salt and then add diced avocado and mix.

Serve in lettuce wraps and enjoy!

No cooking required.
