Turkey and Spinach

This Turkey & Spinach Noodle Soup is a delicious, healthy way to use up those holiday leftovers, with stock, spinach, and a bright lemon touch! Even better? It's ready in 30 minutes!

INGREDIENTS

Leftover Turkey | Turkey Stock  Carrots | Celery | Onions | Garlic Egg Noodles | Thyme | Oregano Celery Salt | Bay Leaves | Lemon Lemon Zest | Olive Oil | Salt | Pepper

Sauté garlic, onion, carrots, and celery. Add herbs and stock, bring to a boil, then add turkey.

Add noodles, cover and let simmer for 10 minutes. Add spinach, lemon juice, and lemon zest and stir well to mix in the spinach.

Cook for another 5 minutes Serve & Enjoy!
