Ingredients

  • 8 cups spiralized zuccchini loosely packed
  • 1/2 cup fresh shredded Parmesan cheese
  • 1 tablespoon olive oil
  • 4-5 lg cloves fresh garlic
  • 1/2 tsp kosher salt
  • 1/4 tsp fresh ground black pepper

Instructions

  • Add zoodles to a colander in the sink or over a bowl and sprinkle with 1 tsp of kosher salt. Let sit for 15-30 minutes to sweat. Then use a paper towel to squeeze out any excess liquid.
  • In a large saute pan, heat olive oil over medium heat and add garlic.  Saute for 1-2 minutes, careful to not burn.
  • Add zoodles, salt and pepper and saute for 3-5 minutes until zoodles are soft, turning often with tongs.
  • Add Parmesan cheese and mix well.  Serve immediately and top with more Parmesan cheese if desired.

Notes

Have your tongs ready to turn those zoodles while they cook.
Add some additional veggies!  Like onion, peas, diced tomatoes, or even some spinach.
Add a protein! Diced chicken or shrimp would be delicious.
