Peanut Butter Chocolate Energy Balls

A super easy, No Bake, Vegan, and Gluten Free Peanut Butter Chocolate Coconut Energy Ball! Perfect healthy, but sweet treat to give you a boost when you need it!

Ingredients

  • 1/2 cup Peanut Butter creamy
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon cocoa powder
  • 1 tablespoon cacao powder
  • 1 cup old fashioned rolled oats
  • 3/4 cup unsweetened shredded coconut
  • 1 tablespoon chia seeds
  • 1/2 cup vegan mini chocolate chips or regular if vegan isn't necessary

Instructions

  • In a medium bowl mix together peanut butter, maple syrup, vanilla, cocoa, and cacao powder. 
  • Add oats, coconut, and chia seeds to the mixture and mix well until it is well combined. Fold in chocolate chips.
  • Roll mixture into 1 - 1 1/2 inch balls, approximately 16.  If the mixture is very very sticky, pop it in the freezer for 10 minutes first.  
  • Store in an airtight container in the fridge for 2 weeks or up to 6 months in freezer.

The nutritional value is approximately per ball.
Gluten-Free
Be sure you use oats that are labeled gluten-free as not all are. 
Substitutions
Maple Syrup:  Use honey (if they don't need to be vegan) or agave. 
Cocoa and Cacao:  You can use all of one or the other or switch up the the amounts.  Cacao has a richer a little more bitter flavor.
