Black Bean Quinoa Salad

Ingredients

Salad

  • 1 cup cooked quinoa
  • 1 cup black beans, soaked
  • 1 cup English cucumbers, chopped
  • 1 1/2 cup cherry tomatoes, chopped
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, minced

Dressing

  • 1/8 cup olive oil
  • 3 tablespoons lime juice
  • 2 teaspoons ground cumin
  • 1 teaspoon kosher salt

Instructions

  • In a large bowl, add all salad ingredients.
  • In a small bowl, add all dressing ingredients and mix well.
  • Add dressing to salad and mix.
  • Serve and enjoy!
