One Pot 20 Minute Greek Pasta
It's a one pot wonder, this Mediterranean inspired pasta is ready in just 20 minutes!

- 12 oz whole wheat pasta
- 6 oz black olives, sliced drained
- 13.5 oz can quartered artichokes drained
- 2 large roma tomatoes, diced
- 1 14 oz can diced tomatoes drained
- 2 teaspoons kosher salt
- 1/2 teaspoon ground black pepper
- 1 tablespoon fresh parsley + to garnish
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 4 1/2 cups water
- 1 1/2 - 2 cups feta cheese seasoned or unseasoned
Add all ingredients, except feta cheese, to a large (at least 5 quart) pot and bring to a boil.
Once boiling, stir often with tongs to prevent pasta from sticking until pasta is cooked al dente and most of the liquid is gone. About 8-9 minutes.
Remove from heat and then add feta cheese and garnish with a litlte more parsley and serve!
You can sub regular spaghetti or linguine.
Sub or add your other favorite veggies!
