Ingredients

  • 1 teaspoons olive oil or 1/4 - 1/2 tablespoon of butter
  • 1/2 green bell pepper, diced
  • 1/3 cup onion, diced
  • 2-3 cloves garlic, minced
  • 1/3 cup leftover ham, diced
  • 4 eggs
  • 1/3 cup cheddar cheese, shredded
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon fine ground salt
  • 1/4 teaspoon dried parsley
  • cooking spray to oil waffle iron

Instructions

  • Pre-heat waffle iron. For ours, we set it to 2-3.
  • In a small sauté pan, heat olive oil or butter and add onion, garlic, and pepper. Sauté for 3-5 minutes until onions are tender, but not browned. Remove rom heat, and set aside.
  • In a medium sized bowl, add eggs, salt, and onion powder and whisk eggs. Add shredded cheese and mix well.
  • Add cooked onions, peppers, and garlic to the eggs and mix well.
  • Give waffle iron a quick spray with cooking spray to grease.
  • With a ladle or a serving spoon, spoon egg mixture in waffle iron, ensuring that you're evenly distributing the ham, pepper, and onions.
  • Cook on level 2-3 for 3-4 minutes until eggs are fully cooked and slightly browned.
  • Serve immediately.

Notes

This recipe makes 4 waffles in a Belgium Waffle maker.  Will make about 1 large or 2 thin waffles in a traditional round waffle iron.
Substitute other meats, veggies, or cheese that you have.
