Green Goddess Salad

A greens packed salad with a creamy dreamy dressing!

Ingredients

  • 2 cups kale shredded
  • 1 cup cucumber chopped
  • 1 cup peas
  • 1/2 cup broccoli chopped
  • 1/3 cup green onions chopped

Dressing

  • 1 large avocado
  • 1/4 cup fresh basil packed, approximately .25 oz
  • 1 large garlic clove
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon kosher salt
  • 2 teaspoons nutritional yeast
  • 2 tablespoons water

Instructions

  • Create the dressing by adding all ingredients into a food processor or blender and blending until creamy.
  • Add salad ingredients, kale, cucumber, peas, broccoli, and onions to a bowl and mix.
  • Add dressing and mix well.
  • Enjoy!

Notes

Storage
Fridge: Store salad fully assembled for 3-4 days.  
Dressing: Prepare dressing in advance and store in the fridge in an airtight container for up to 5 days.  
Substitutions
Veggies: Add your favorites like spinach, cabbage, zucchini, bell peppers.  
Protein: Add chickpeas, or if it doesn't need to be vegan, add some grilled chicken, or shrimp. 
Nutritional Yeast:  We have made this dressing without this and it's still tasty, but it's just not as tasty.  But you can make it without and still have a tasty salad.
