It is a salad that is on forever rotation in our house, not only because of the easy, stinkin' delicious green goddess dressing but also because of the nutrient-rich, vitamin-packed, health bomb of a bowl that all of these veggies are together. This salad is perfect for an easy breezy summer lunch or dinner!
Ingredients Needed
- Kale - The base of this salad, but you could also use another hearty green like spinach or your favorite lettuce.
- Peas - This is one of the most important greens to add to this salad because it adds such a delightful touch of sweetness.
- Cucumber - Another perfect green to add to this salad because it adds a nice amount of crunch.
- Broccoli - Some shredded broccoli adds some great texture (and nutrition) to this salad, but you could leave it out if broccoli isn't your thing.
- Green Onions - Oh hey, they're not pictured. Ha. These add a great, subtle allium flavor to this green goddess salad.
- Avocado - The heart and creaminess of this green goddess dressing.
- Basil - Some fresh (and green!) herbal flavor that's perfect for the dressing.
- Lemon Juice and Apple Cider Vinegar - The right amount of bright acidity for this dressing.
- Garlic - Just a touch of fresh, but you could also use powdered, too.
- Nutritional Yeast - Just a touch and this adds the right amount of flavor to this dressing! We have made it without nutritional yeast and it's still tasty, but this adds just the right amount of added flavor to make it really tasty!
- Kosher Salt - Of course! You can also add a little ground pepper to taste, too!
Green Goddess Salad Dressing
Create the heart of this Green Goddess Salad recipe: The green goddess dressing. This is a variation of our other Green Goddess Dressing, but simpler and perfect for the components of this salad.
To make this green goddess salad: add it all to a food processor or blender, and blend! Does it get any easier?
Salad Assembly
Once you have your dressing, then it's just a matter of adding all of your gorgeous greens to your bowl with that green goddess dressing to create the greenest, dreamiest, Greed Goddess Salad!
Even though this appears to be just a bowl of greens, that dressing is what truly makes it a meal, thanks to the avocado. It makes it hearty and satisfying!
Recipe Tips
Normally for a kale salad, you want to massage the kale with some oil, lemon, and salt to help tenderize it a bit, but that's not needed with this recipe as long as you give it a really good mix in the dressing.
We keep it all green for the namesake, but you can add whatever you would like! Chickpeas, chicken, or shrimp for some added protein, some summer zucchini, cabbage, bell peppers, spinach instead of kale, the possibilities are endless. I will advise don't skip the peas - they add such a delightful sweetness.
Even though this salad only takes about 10 minutes to prep, it's wonderful to prepare in advance. My husband absolutely loves this for lunch and you can absolutely prep it and store it in the fridge for 3-4 days.
A salad packed to the green gills and fit for a goddess! This Green Goddess Salad is a new favorite in our house!
