When you're craving beef tacos and soup at the same time, take out your trusty slow cooker and make our incredibly easy Crock Pot Taco Soup recipe! It's perfect for those busy weeknights and is ready for any and all the taco toppings you'd like!
Bring on soup season and Crock Pot season! With school and all of the after-school activities, our weekdays are jam-packed. Which means we need something quick and easy to put on the table. Our Crock Pot Taco Soup recipe is the answer because it's the perfect easy soup to let simmer in the slow cooker all day. Plus, it's a great pantry soup because it's made with ingredients that you probably already have! It's a soup that is filling, comforting, and cozy to come home to after a long weekday.
Ingredients Needed
- Ground Beef - You could also use ground pork or even omit it for a vegetarian taco soup! We prefer to use a learner ground beef of 85%-90%, but you can use whatever you have on hand.
- Beans and Corn - We prefer black beans but you can absolutely use whatever other beans you prefer in your tacos!
- Tomato Sauce and Diced Tomatoes - The base of this tomato-based soup.
- Beef Stock - Just a little add some more flavor.
- Garlic and Onion - A staple for our savory recipes!
- Green Chilis - We use mild for this recipe, but you can also add some extra heat by using a hot variety.
- Taco Seasoning - While you can use a premade packet, we prefer to use our own because we find it adds so much more flavor than the premade version!
- Fresh Cilantro - To finish with!
Easy to Make
Brown the Ground Beef
While not absolutely necessary, this is a step you don't want to skip because browning your meat before adding it to a soup or the crock pot will give it so much more flavor. Plus, you don't want to add all of the grease to your soup, especially if you're using ground beef with a higher percentage of fat, so if you brown it first, then you can add just the meat and leave out the grease.
Dump and Go!
Once your beef is browned then it's just a dump-and-go soup! Add it all except the cilantro, give it a mix, and let it do its thing while you're busy doing yours!
Once it's done, top it with some fresh cilantro and you're ready to serve!
The only thing that makes this Crock Pot Taco Soup recipe better is topping it with a dollop of sour cream, some cheese, and some tortilla strips to really give it the crunch of a taco! You can also add some fresh avocado, sliced jalapenos, and anything else you top your favorite beef tacos with!
Recipe Tips
A very important step as mentioned above. Plus you can saute the onion and garlic at the same time which will also give the soup much more depth of flavor than if you added it all in raw.
Our homemade taco seasoning is mild, but you can of course adjust it to your own tastes and make it a little spicier with more cayenne, or you can also use some spicy green chilis, too!
You can absolutely use a premade taco seasoning for this taco soup, too, but honestly, we find that whipping up your own adds much more flavor!
Another great aspect of this dump-and-go crock pot taco soup recipe is that you can totally adjust it! Add some different veggies like bell peppers or use a different bean like kidney or pinto.

Crock Pot Taco Soup
Ingredients
- 1 tablespoon olive oil
- 1 lb ground beef
- 1 onion
- 3 cloves garlic
- 1 6 oz diced chilis
- 1 14 oz corn
- 1 14 oz black beans
- 1 14 oz tomato sauce
- 1 14 oz diced tomatoes
- 2 cups beef stock
- 5 teaspoons taco seasoning divided
- 1/3 cup fresh cilantro for garnish, chopped
Garnish
- tortilla strips
- sour cream
- shredded cheese cheddar, cotija, or your favorite
Instructions
- Brown Beef: In a saute pan, heat olive oil to medium, add garlic and onion, and saute for 2-3 minutes until translucent. Add ground beef, break it up with a wooden spoon, and add 2 teaspoons of taco seasoning. Saute for 7-10 minutes, breaking it up as it cooks. Add ground beef and onions to the crock pot (but leave grease).
- Dump and Go: Add beef broth, corn, beans, green chilis, tomato sauce, diced tomatoes, and 1 tablespoon of taco seasoning to the crock pot. Mix well. Slow cook on high for 3-4 hours or on low for 6-8 hours.
- Serve: Once done, finish in the crock pot with fresh chopped cilantro. Serve in bowls and top with sour cream, cheese, and tortilla strips.
