One-pan meals are some of my favorites to make because they're so convenient for those busy weeknights and any time I get to reduce the amount of dishes to wash at the end of a meal, I'm in. Our latest Mediterranean-inspired recipe, our One Pan Greek Chicken Legs is a roast chicken recipe that's packed full of flavor but made with minimal effort!
Ingredients Needed
- Chicken Legs - This is a cut of chicken that we don't often cook with, but every time we make it, we wonder why we don't! This would also be great with bone-in chicken thighs, too.
- Artichokes - We just love the sweet, earthy, nutty flavor that artichokes bring to this dish.
- Red Onion - Distinct to Greek flavors, the sharper flavor of the red onion is key to these Mediterranean flavors.
- Kalamative Olives - Again key to Greek flavors, although black olives could also be used in a pinch, but the extra salty and briny flavors of kalamative olives are key.
- Red Wine Vinegar and Lemon Juice- Just a little acidity to help deglaze the pan and add flavor.
- Feta Cheese - This salty briney cheese is key to this Mediterranean-inspired dish.
- Parsley - Fresh to finish with!
- Salt and Pepper - To season the chicken.
Easy to Make
Generously Season the Chicken
It is important to season your chicken well because it will help all of the amazing flavors of your dish penetrate into the chicken and will also help promote that nice crispy golden skin on the outside of your chicken legs.
Sear Chicken Legs
Searing your chicken before roasting is another way to ensure that you have a nice crispy skin, and it'll help keep that moisture in your chicken to avoid soggy skin also nice juicy chicken legs.
Then add your red wine vinegar and lemon juice to deglaze that pan and scrape up all of those flavor bits on the bottom, and then add your onion, artichokes, and olive and bake.
Finish with that feta and fresh parsley and One Pan Greek Chicken Legs is done! So much flavor and so much color for a healthy, delicious Mediterranean-inspired meal.
Recipe Tips
Definitely don't skip searing the chicken legs. This adds key flavor and crispiness to your chicken legs.
Give your chicken legs a little bit of time to come up to room temp so that you get a more even cook on it. It doesn't take long, just about 10-15 minutes will help that chicken have a much more even cook.
For this recipe, you'll want at least a 3.5-quart skillet to give everything enough room.
Not a fan of olives? No problem, leave those out and just keep the artichokes, onion, and feta.
I love this meal for a low-maintenance do a little prep, toss in the oven, and go about my life kind of a meal. Watching those carbs? Then this is a great low-carb gluten-free chicken meal! Or it's a great accompaniment to a ton of sides!

One Pan Greek Chicken Legs
Equipment
- 3.5 qt or larger saute pan
Ingredients
- 2 lbs chicken legs
- 2 teaspoons olive oil
- 1/2 red onion chopped
- 6 oz kalamata olives
- 1 3/4 cup artichoke hearts 13.5 oz can
- 3 oz feta cheese
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 3/4 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1/4 cup fresh parsley chopped
Instructions
- Preheat Oven: Preheat the oven to 350 degrees F.
- Sear Chicken Legs: Heat olive oil over medium-heat in a saute pan. Add chicken legs, skin side down, and sear. Turn with tongs often to sear all sides of the legs for 5-7 minutes.
- Deglaze and Add Veggies: Turn the heat off and deglaze the pan with vinegar and lemon juice, gently scraping up any charred bits off of the bottom of the pan. Add onions, artichokes, and olives to the pan surrounding the chicken.
- Bake: Add the entire saute pan to the middle rack of the oven and bake for 45 minutes.
- Garnish and Serve: Once done, remove from the oven and top with fresh parsley and feta cheese and serve!
