Switch up your normal rice side by adding a ton of flavor and a hint of sweetness without any added effort. Our Coconut Jasmine Rice recipe is a great way to add some depth and flavor to any meal!
This is not your normal rice, friends! Our Coconut Jasmine Rice is an absolutely delicious way to add a lil something extra to that rice dish, but without having to add much work. Flavored with coconut milk, just a touch of sugar, and then enhanced with coriander and cilantro, this coconut rice recipe will make any meal just a little bit better.

- Jasmine Rice - This is a long-grain fragrant white rice. You can of course use regular white rice, too!
- Coconut Milk - There are a few different options you can choose for this, full fat, lite, and nonfat. As with most things when it comes to fat, how much you choose will adjust the richness of the dish. Full fat and lite are our recommended, nonfat - it's just not the same.
- Water - The rest of the liquid to cook the rice in.
- Sugar - Just a touch, not too much. You want a subtle sweetness to the rice, but this is by no means a sweet rice.
- Salt and Coriander - Flavor enhancers of the rice!
- Cilantro - Fresh cilantro to finish with!
Rinse Your Rice
A key step to getting nice fluffy rice is being sure to rinse your rice before cooking. This will help remove the extra starch on the outside, which ultimately helps prevent it from getting mushy or sticking and clumping. You can add it to a bowl, fill it with water, swish it with your hands and you'll see the water become cloudy (that's the starch!). Drain water from the bowl and repeat 2-3 times until the water runs mostly clear. You can also just add the rice to a fine colander or strainer and run cold water over it, gently moving it with your hands. You'll see the cloudy (starch-filled) water drain for about 15-30 seconds.
Easy to Make
One of the best parts of this coconut rice recipe is that it's just like any other rice recipe but with just a ton of added flavor thanks to swapping out half of the water for rich coconut milk and adding additional flavor with ground coriander. Just add it all to your pot, bring it to a boil, cover, and simmer, and then it's done and ready for a fluff with your form!

Recipe Tips
Technically, no. However, this is a pretty key step in being able to ensure fluffy, clump-free rice by removing that extra layer of starch.
You can absolutely use either! We usually use a lite coconut milk for this recipe but you can absolutely use whole-fat coconut milk for ultimate richness and flavor!
Definitely! Any other white rice is great for this recipe. Brown rice takes significantly longer to cook, so that will adjust the cooking time.

Coconut Jasmine Rice
Equipment
- medium sauce pan
- colander or strainer optional
Ingredients
- 1 cup jasmine rice
- 3/4 cup coconut milk
- 3/4 cup water plus more for rinsing
- 2 tablespoons sugar
- 3/4 teaspoon kosher salt
- 3/4 teaspoon ground coriander
- fresh cilantro to garnish
Instructions
- Rinse the Rice: Add rice to a medium-sized bowl and fill it with water. Swish rice with your hands until the water turns cloudy. Rinse and repeat 2-3 times until the water runs mostly clear. Drain in a colander or strainer.
- Cook Rice: Add rice, 3/4 cup water, coconut milk, sugar, salt, and coriander to a pot and heat over high until it all comes to a boil. Lower to a simmer and cover and let cook for 15 minutes. After 15 minutes, remove from the heat but keep the lid on to finish cooking.
- Fluff and Serve: Use a fork to gently fluff the rice in the pot before transferring it to a bowl, topping it with fresh cilantro, and serving.
