Instant Pot Gochujang Chicken Lettuce Wraps

Packed with Korean-inspired flavors, our Instant Pot Gochujang Chicken Lettuce Wraps are a super easy and fast shredded chicken recipe that’s perfect to wrap up in crisp fresh lettuce for a healthy and delicious gluten-free appetizer or light meal! With slow cooker instructions, too!

Let the Korean-inspired cooking continue! We are loving adding gochujang to our recipes lately, which inspired this new shredded chicken recipe which is just perfect for a light gluten-free lunch or dinner, our Instant Pot Gochujang Chicken Lettuce Wraps! Packed full of flavor and is so easy and fast to make thanks to your trust Instant pot, or slow cooker! But don’t stop at just lettuce wraps, we love this easy shredded chicken recipe over rice and in sandwiches, too!

Ingredients Needed

  • Chicken– We prefer the leaner chicken breast, but you could also use boneless and skinless chicken thighs, too!
  • Gochujang – A staple in Korean condiments! Its sweet and spicy flavor is one of our new favorites!
  • Onion and Garlic – Fresh onion and garlic cooked with the gochujang chicken is our preferred, but you could also use powdered, too.
  • Seasoned Rice Vinegar – The acidity and sweetness (be sure to use seasoned) balance the gochujang perfectly.
  • Sesame Oil – The necessary fat to the recipe, but that adds a great sesame flavor, too. No sesame oil? No problem, olive oil or even butter works, too!
  • Ground Ginger – One of my favorite spices to add to both savory and sweet recipes!
  • Chicken Stock – Just about a cup for the chicken to cook in.
  • Salt – Just a little to season the chicken.
  • Butter Lettuce – This is our favorite lettuce for lettuce wraps because of its cup-like shape. But you could also use romaine or any of your other favorites.
  • Carrot and Cabbage – These add great fresh crunch and texture! You could also use some pickled veggies, like some leftovers from your Grilled Chicken Banh Mis.

Made Easily in the Instant Pot

I’ll be honest, we don’t use the Instant Pot very much around here as I’ve always just been more comfortable with our Crock Pot, but in addition to cooking more Korean, utilizing our Instant Pot is on my list for this year too. And this Instant Pot shredded chicken is a delicious combination of both!

Add everything to that trusty Instant Pot (or slow cooker) and let it do its thing so you can give that tender chicken a nice shred.

Add to Lettuce

The final step of these easy shredded chicken lettuce wraps, adding them to the lettuce! Topped with some sesame seeds, thin carrot sticks, and shredded cabbage to add some fresh crunch! Or add some tangy flavor with our Easy Pickled Onions!

These Instant Pot Gochujang Chicken Lettuce Wraps are so fast, fresh, and delicious, all while being gluten-free, low in fat, and high in flavor!

While served in lettuce wraps is our favorite way to enjoy this gochujang shredded chicken, we also love it with our Coconut Jasmine Rice, or over a bed of brown rice for a heartier meal, too! Both delicious. Both fast and easy!

Instant Pot Gochujang Chicken Lettuce Wraps

Made quickly and easily in the Instant Pot, this shredded chicken is packed full of flavor and perfect to be wrapped up in a lettuce wrap!

Equipment

  • Instant Pot
  • or Slow Cooker

Ingredients

  • 2 lbs boneless chicken breasts
  • 1 cup chicken stock or vegetable stock
  • 1/2 white onion thinly sliced
  • 3 cloves garlic
  • 2 tablespoons gochujang
  • 3 tablespoons seasoned rice vinegar
  • 1 teaspoon garlic chili sauce
  • 1 teaspoon ground ginger
  • 1 teaspoon kosher salt
  • 1 tablespoon sesame oil
  • 1 head butter lettuce washed and dried
  • 1-2 large carrots in thin sticks
  • 1 cup cabbage shredded thin
  • sesame seeds optional garnish

Instructions

  • Add chicken to Instant Pot cooking pot and season with salt.
  • Add onions, garlic, chicken stock, gochujang, ginger, seasoned rice vinegar, garlic chili sauce, and sesame oil to pot.
  • Cover and set the pressure cooker lid valve to “sealing.”  Pressure cook for 10 minutes then allow a 5 minute natural release, then carefully flip the valve to “venting” to release the pressure that remains.
  • Remove the lid and shred chicken with two forks in the pot and all toss in the liquid.
  • Wash and dry the butter lettuce leaves and then add shredded chicken (use tong or fork to shake off excess liquid) to lettuce leaves. Top with sesame seeds, carrots, and cabbage.
  • Enjoy!

Notes

Storage
Fridge – Store in the fridge for up to 3 days. 
Freezer – Store in the freezer for up to 3 months.
Substitutions
Chicken – boneless skinless chicken thighs are also great!  
Onion – White or yellow, or use 1 teaspoon onion powder in place of fresh onion.
Garlic – Use 1/2 teaspoon of garlic powder in place of fresh.
Seasoned Rice Vinegar – You can also use mirin.
Serve it With 
You can serve this with raw carrot and cabbage, or some pickled carrot and daikon! Top with sesame seeds or sliced green onions or serve it over a bed of rice! 
Crock Pot
To cook in a crock pot, add everything to the crock pot and cook on high for 3-4 hrs or low for 6-8 hours.

    Oh my, this chicken lettuce wraps dish looks amazingly delicious and very yummy! Definitely an instant favorite, another great way to eat shredded chicken with a bang! Loved it!

  2. Um … I’m missing the actual recipe?
    I mean, it’s fairly self-explanatory, but I’d still prefer to have a list of ingredients, cooking times, number of portions and the like? Pretty please?

    (That aside, I really like your blog. Living in Germany, cooking American recipes isn’t always easy as some common ingredients (like condensed cream-of-whatever soups, certain condiments or spice mixes) aren’t readily available here, so I’m finding this really helpful. Also, German cooking culture tends to be far more “from scratch”, so your posts are right down my alley. Although I do admit to sometimes using ready-made/frozen/canned ingredients when I’m in a time pinch — but don’t we all on occasion? :-P)
