Tomato Arugula Baguette Sandwich

No cooking required for this easy veggie-packed sandwich! Our Tomato Arugula Baguette Sandwich has fresh tomatoes, peppery arugula, pickled onions, nutty cheese, and a basil butter spread, making it a delicious and healthy vegetarian baguette sandwich!

It is HOT out there! While the Pacific NW has missed most of the heatwaves that the rest of the country experienced this summer, it’s finally hit us. And when it’s this hot out, the last thing we want to do is turn on our oven or stovetop. This means we want an easy, no cooking required hot weather meal, just like this sandwich! Our Tomato Arugula Baguette Sandwich highlights fresh summer tomatoes while pairing them with nutty cheese, peppery arugula, and tangy pickled onions, on a chewy baguette with a basil butter spread!

Ingredients Needed

baguette, tomatoes, onions, arugula, basil, gruyere, butter, and garlic.
  • Baguette – You could of course also make this on your favorite sandwich bread, too, but we love the chewy baguette for this one. This would also be delicious in our Vietnamese Baguettes, too!
  • Heirloom Tomatoes – Heirloom tomatoes are my favorite for this sandwich because they have so much flavor, but of course, use your favorite! Any fresh summer tomato is perfect for this tomato baguette sandwich.
  • Arugula – The peppery flavor of this powerhouse green is the perfect pairing for all of the other flavors!
  • Pickled Onions – A little acidity and tanginess! Plus, now that we make our own, I want to put them on everything!
  • Gruyere Cheese – We love this hard cheese on this sandwich because it’s a little earthy and nutty and compliments everything else on this sandwich perfectly.
  • Butter, Basil, and Garlic Powder – This is for an absolutely delish butter basil spread for the baguette.

Ready in Minutes

This tomato baguette sandwich comes together in no time! The first step is to make a super flavorful basil butter spread by mixing some soft butter with fresh basil and garlic powder.

Then it’s time to assemble! Slice that baguette lengthwise and then in half so you have 4 pieces. Butter the top half of the baguette, then add a layer of cheese, tomato, arugula, and pickled onions.

Recipe Tips

Use a Fresh Baguette

Whether you make it yourself or buy one at the store, the fresher the better. There’s nothing worse than a baguette that’s hard and stale. With that said, there are ways to soften a hard baguette, too! Check out the recipe notes for that tip!

Use Soft Butter

When it’s hot out, you’ll likely have no problem having some nice soft butter. You’ll need it to be very soft in order to mix the basil and garlic in. Soft, but not melted. Check out the recipe notes for tips on how to quickly soften butter!

Customize!

You can of course use this recipe more as a guide than follow its quantities to a tee in order to customize it to your tastes! Love pickled onions? Great – load ’em on! Can’t get enough tomatoes? Wonderful – add a second layer.

Ingredients

  • 1 baguette
  • 2 heirloom tomatoes or your favorite sweet tomato, sliced
  • 8-10 slices gruyere cheese about 4.75 oz
  • 1/2 cup pickled onions
  • 1 cup fresh arugula
  • 3 tablespoons salted butter very soft
  • 1/4 teaspoon garlic powder
  • 1/4 cup basil chopped

Instructions

  • Prep Butter: In a small bowl, add very soft butter, basil, and garlic powder. Mix well.
  • Slice Baguette: Slice your baguette lengthwise. You can choose to either assemble like this, or halve so that you have 4 pieces that are about 9 inches long.
  • Fill Sandwich: On the top half of the baguette, spread a thick layer of the basil butter spread.
    On the lower half, add a layer of tomatoes, gruyere cheese slices, arugula, and pickled onions. Top with buttered baguette half.
  • Slice and Serve: Gently cut the baguette into 4 pieces (will be approximately 4 1/2 inches long) and serve!

Notes

Makes approximately 4 sandwiches that are about 4 1/2 inches long, nutritional value per sandwich. 
Soften Butter
Be sure that your butter is very soft so that it can be mixed well with garlic powder and basil.  Do not melt in the microwave, instead, fill a glass with boiling water (or heat water in the glass in the microwave until it boils), then empty the water and place the now hot glass over the butter. Let sit for 5-10 minutes until the butter is soft. 
Customize
Add more or less of any filling to fit your taste!  
Soften Baguette
You can soften a hard baguette by drenching it in cold water, wrapping it in foil, and then placing it in a (cold) oven. Set the temp to 300 degrees F and then let it bake for about 12-15 minutes. Remove from foil and bake for another 5 minutes. 
Substitutions
Cheese: We love hard nutty cheese for this sandwich, so if you don’t have gruyere, manchego, gouda, or cheddar.
Baguette: Our Vietnamese Baguettes are a great choice, too! 
Layering
We’ve found that the best layering is to put the tomatoes down first on the baguette half that does not have the butter basil spread. This will allow the juice of the tomatoes to soak into the bread.  But you can layer it however you desire!
