7 Layer Taco Dip From Scratch

It’s the classic party appetizer but taken to the next level! Our 7 Layer Taco Dip From Scratch is everything you love about this classic, but with some serious from scratch flair with homemade refried beans, salsa, and taco seasoning!

Bring on the party snacks! Is there anything that says “let’s party,” it’s a loaded dip. Our 7 Layer Taco Dip From Scratch is everything you love about this party classic, but with our signature from scratch flair thanks to some of our favorite Mexican inspired components. It’s an easy, no fuss, no bake, delicious way to get a party started!

Ingredients Needed

bowls of salsa, shredded cheese, lettuce, refried beans, olives, mayo, sour cream, taco seasoning, lemon juice, and halved avocados labeled.
  • Refried Beans – The first from scratch layer of this dip, and truly, if you’re going to make any part of this dip from scratch, this is the one you want to make because it is (quite literally) the delicious base!
  • Salsa – A close second to make from scratch is our Roasted Tomato Salsa. Be sure to see our notes on reducing the liquid in our recipe.
  • Lettuce and Avocado – For some fresh crunch and a little additional texture from the avocado.
  • Cheddar Cheese – This is our go-to cheese for this, but you can use cheddar with a combo of mozzarella, pepper jack, colby, a Mexican blend, or any of your favorites.
  • Sour Cream and Mayonnaise For a creamy and spiced layer, and another opportunity for some from scratch flair with some homemade mayonnaise!
  • Taco Seasoning This is by far the easiest of the from scratch components and another one that’s great to make and have on hand.
  • Lemon Juice – Just a touch for the right amount of acidity to the creamy mayo and sour cream layer.
  • Sliced Olives – The last signature 7-layer dip layer for that final briney salty touch!

SO Easy to Make

Assemble. That’s it. Once you have all of the ingredients, just add them to a baking dish in those classic 7 Layer Dip layers.

Make Ahead

This is such a great recipe to make ahead! You can make the whole dip a day ahead, and/or you can also make all of the components individually, to be able to serve it from scratch, and then assemble when needed!

Now for the chips! The beauty of this 7 Layer Taco Dip From Scratch is that any table you put this out on, it will be loved, and folks can either dig right in with some tortilla chips or pita chips

Equipment

Ingredients

  • 2 cups refried beans
  • 1 cup sour cream 7.6 oz
  • 1 cup mayonnaise 7.6 oz
  • 1 3/4 – 2 cups salsa
  • 2 cups lettuce shredded
  • 1 cup avocado cubed
  • 2 cups cheddar cheese shredded
  • 1 cup black olives sliced, 6 oz
  • 2 teaspoons taco seasoning
  • 1 teaspoon lime juice

Instructions

  • Prep Mayo/Sour Cream: Add the mayonnaise and sour cream to a medium sized bowl with taco seasoning and lime juice and mix well.
  • Assemble: Assemble the dip by adding beans to the bottom of the dish and spreading them to an even layer with a spatula. Clean the spatula and then add the sour cream/mayo mixture and spread in an even layer. Clean the spatula and add the salsa and spread it in an even layer. Add the lettuce on top in an even layer, top with cubed avocado, then shredded cheese, and finally diced olives.
  • Serve and Enjoy!

Notes

Storage
Assemble and tightly cover and store for a day in advance. 
Make Ahead: You can make each of the from scratch components in advance and then assemble when needed.
Substitutions
Avocado: Personally, I enjoy the texture of the avocado cubes, but you could also use your favorite guacamole, or our Spinach Guacamole for some added sneaky nutrition.  
Salsa: Whatever salsa you choose to use, be sure that it is a thicker salsa that has less liquid. For our Roasted Tomato Salsa, see the recipe notes for how to make our salsa for this recipe, and/or add the salsa to a fine mesh sieve and let the liquid from the salsa drain. 
Cheese: Use any mixture of your favorites! 
Extra Liquid
Depending on the salsa that you use, you may need/want to remove some of the liquid that will separate in to the bottom of the baking dish.
