Ahh the final days of summer break! We are squeezing every last drop out of summer, including all of the grilling and cookouts, and we have one last amazing summer side, to share before move into fall foods. And dare I say, it is my new favorite pasta salad recipe! Our Dill Pickle Pasta Salad has all of the flavors you love from a dill pickle and adds them to a creamy dressing for a pickle and dill-packed pasta salad!
Ingredients Needed
- Pasta - One of our favorite pasta salads kinds of pasta is rotini. Its little nooks hold in so much dressing and flavor! You can of course use your favorite.
- Dill Pickles - The star of the show! Use your favorite brand, or make your own!
- Celery and Onion - Not too much, because again the dill is the star. We tried this with red onion but found it a little too sharp and that white is a much more complimentary choice.
- Fresh Dill - While you can use dried dill, fresh is for sure our preference.
- Mayonnaise - Key for the creamy dressing! Have you made your own, yet?
- Sour Cream - We love adding the tangy sour cream to this dressing not only for the flavor but also for the thickness which helps balance the added liquid.
- Mustard and Coriander - Some of the same flavors you'll find in dill pickles!
- Apple Cider Vinegar - This adds just the right amount of acidity.
- Dill Pickle Juice - Add a little juice from the jar to really round out that dill pickle flavor!

Make the Dressing
This creamy flavorful dressing is key to this dill pickle pasta salad mimicking dill pickles! And it's so incredibly easy to make - just toss it all in a bowl and give it a good mix!
Assemble
Then, after your pasta is cooked, it's just a matter of adding it all to a bowl and giving it a good mix!

Recipe Tips
A very important tip for anytime you make pasta! This will ensure that the pasta itself is well seasoned.
For hot pasta dishes, definitely do not rinse the pasta because those added starches help the sauce stick to the pasta. But for cold pasta dishes like pasta salad, you want to give your pasta a quick rinse. This will help stop the cooking process, bring the pasta (and overall dish to a cooler temp), and prevent your pasta from becoming a big clumpy mess.
This dill pickle pasta salad comes together really fast on its own, but if you want to cut out any added time (I get that!), then this is great to prep in advance, except wait to assemble right before serving. Prep the pasta with the pickles, celery, and onion in one bowl, and the dressing in another. Then assemble and mix it all together right before you're ready to serve.

Dill Pickle Pasta Salad
Equipment
- large bowl
- small bowl
Ingredients
- 8 oz rotini pasta
- 1/2 cup celery chopped
- 1/2 cup white onion chopped
- 1 cup dill pickles chopped, 6-8 spears
Dressing
- 1/2 cup mayonnaise 4.6 oz
- 1/4 cup sour cream 2 oz
- 1 tablespoon dill pickle juice
- 2 teaspoons apple cider vinegar
- 1 teaspoon ground mustard
- 1/2 teaspoon ground coriander
- 1/2 teaspoon kosher salt
- 1 tablespoon fresh dill minced, + more for garnish
Instructions
- Cook Pasta: Add a large pot of water to a stovetop and heat on high to bring to a boil. Cook pasta for 9 minutes, or whatever the time listed for that particular pasta is. For fresh pasta, it is only 2 minutes.
- Make Dressing: Add mayo, sour cream, dill, mustard, coriander, salt, vinegar, and dill pickle juice to a small bowl and mix well.
- Assemble Salad: Once the pasta is done, add it to a large bowl with chopped celery, onion, and dill pickles. Add dressing and then mix well. Finish with more fresh dill if desired, and enjoy!
