Peel Peaches: Peel and pit the peaches. See notes for how to peel peaches based on ripeness. Add peaches to a freezer safe container and freeze until they are firm, usually about 2 -4 hrs.
Blend: In a food processor, add frozen peaches, sugar, salt, and lemon juice and blend until creamy.
Freeze: Transfer to a loaf pan (or other freezer safe container) and freeze (4 hrs to three days).

StorageStore the sorbet in the freezer for about a month.Peeling PeachesIf the peaches are firm, you should be able to use a vegetable peeler to peel them. If they are soft and ripe, then use a pairing knife to cut a cross at the bottom of the peach and then drop them in boiling water for 20-30 seconds. Transfer the peaches to a bowl with ice water to cool and then once cool, the skin should peel away easily. Halve and then remove the pit. Sugar: This is a lower-sugar sorbet recipe, you can increase the sugar up to 1 cup.Customize: Use another fruit or add fruit to peaches!
