Marinate Chicken: Pat chicken breasts dry. Using a sharp knife, halve each breast lengthwise. Season both sides with kosher salt and Italian seasoning, and add to a Ziploc bag with olive oil. Mix well, then marinate in the fridge for at least 30 minutes and up to overnight.
Preheat Oven: Preheat oven to 375℉
Bake: Lightly grease a baking sheet or line with parchment paper. Add marinated chicken breasts to the pan. Top with mozzarella slices and bake in the oven for 20 minutes on the middle rack.
Add Bruschetta: After the first 20 minutes, remove the pan from the oven and move the rack one level up (not the top rack). Turn up the oven temperature to broil** (See recipe note). Spoon the bruschetta onto the chicken on top of the melted cheese. Return the tray to the oven and broil for 3-4 minutes.
Serve and Enjoy: Once the cheese is slightly browned, remove from the oven, add chicken to a serving platter with fresh basil, and serve and enjoy!
Notes
**Broil:This step is optional to add a little color to the chicken and the cheese, but you can also leave the tray in the center rack and just bake for another 5 minutes at 375 degrees F with the bruschetta. Bruschetta for just this recipe
