Instructions

  • Marinate Chicken: Pat chicken breasts dry. Using a sharp knife, halve each breast lengthwise. Season both sides with kosher salt and Italian seasoning, and add to a Ziploc bag with olive oil. Mix well, then marinate in the fridge for at least 30 minutes and up to overnight.
  • Preheat Oven: Preheat oven to 375℉
  • Bake: Lightly grease a baking sheet or line with parchment paper. Add marinated chicken breasts to the pan. Top with mozzarella slices and bake in the oven for 20 minutes on the middle rack.
  • Add Bruschetta: After the first 20 minutes, remove the pan from the oven and move the rack one level up (not the top rack). Turn up the oven temperature to broil** (See recipe note). Spoon the bruschetta onto the chicken on top of the melted cheese. Return the tray to the oven and broil for 3-4 minutes.
  • Serve and Enjoy: Once the cheese is slightly browned, remove from the oven, add chicken to a serving platter with fresh basil, and serve and enjoy!

Notes

**Broil: This step is optional to add a little color to the chicken and the cheese, but you can also leave the tray in the center rack and just bake for another 5 minutes at 375 degrees F with the bruschetta.
