Raw Broccoli Salad

A crunchy raw broccoli salad with Asian-inspired flavors!

Ingredients

  • 8 cups broccoli florets
  • 1/2 red onion sliced thin, approximately 1 cup
  • 3/4 cup golden raisins
  • 3/4 cup salted cashews
  • 2 tablespoons sesame seeds toasted

Mayo Dressing

Instructions

  • Prep Mayo: In a small bowl, add all of the mayo dressing ingredients and whisk until well combined. Set aside.
  • Assemble Salad: Add broccoli florets, onion, raisins, and cashews to a large bowl and mix. Add mayo dressing and mix well until it's all well combined.
  • Chill: Cover and store in the fridge for at least 1 hour to chill before serving.
  • Serve and Enjoy!

Notes

Make Ahead
This salad is great to make ahead. Preferred is to prep the salad ingredients separately from the mayo and then assemble it all an hour before serving. 
Substitutions
Broccoli:  Be sure to use fresh! 
Onions: A sweet yellow onion can be used, too. But red is really the best. 
Raisins: Regular raisins are delicious, too!
Cashews: Almonds, walnuts, and hazelnuts are good subs. But cashews are really the best in this salad.
