A simple broccoli salad, but with a little Asian flair! Our Raw Broccoli Salad is an incredibly easy-to-make cold broccoli salad with no cooking required that's ready in just minutes and packed full of raisins, cashews, and a flavorful ginger mayo dressing!
Bring on the summer salads! We absolutely love a no-cook summer salad that's packed full of flavor and easy to make. That's exactly what our Raw Broccoli Salad is! It's an easy, classic cold broccoli salad, but with a little bit of Asian flair to make it just a little different than what will be on a normal cookout table and it'll make a delicious easy lunch all summer long!
Ingredients Needed
- Broccoli - Fresh and raw cut into bite-sized pieces. But fresh is a must, despite the name, this is not one for frozen broccoli.
- Cashews - The right salty crunchy addition!
- Red Onion - Added color and flavor, but sliced very thin so it's not overpowering.
- Golden Raisins - We absolutely love the subtle sweet addition of golden raisins to this broccoli salad, but of course, you can also use regular raisins, too.
- Mayonnaise - Have you made your own, yet?
- Seasoned Rice Vinegar - Some of the Asian inspiration that adds great acidity and sweetness to the dressing.
- Coriander and Ground Ginger - Coriander is way underused in my opinion, and ground ginger is one of my favorites. Together, they add a unique and delicious flavor to a raw broccoli salad.
- White Pepper - Unlike black pepper, white pepper is a little earthier in flavor without the "heat" of the black pepper.
- Toasted Sesame Seeds - To finish with! Toasted is our preferred, but you can also use untoasted. But giving the sesame seeds a little toast definitely brings out their flavor more and adds a great rich nutty flavor to this broccoli salad.

Prep the Mayo
The first step to this easy raw broccoli salad is preparing the super flavorful mayo. Just add it all in a bowl with mayonnaise and then mix!
Mix the Salad
Then it's just a matter of adding that broccoli, onions, cashews, and raisins to a large bowl and giving it a good mix before adding that flavor-packed mayo!

Recipe Tips
This is a broccoli recipe that substituting frozen broccoli just won't do. Be sure to use fresh broccoli florets!
In order to ensure full flavor distribution, be sure to mix all of those Asian flavors in the mayonnaise before adding it to the salad.
Prepare this salad and then be sure to let it chill for at least an hour before serving. This will help meld all of the flavors together and chill it all so it's extra crisp!
So while most people know broccoli salads, this one is one that's flavored differently and will be a welcome change from the norm!

Raw Broccoli Salad
Ingredients
- 8 cups broccoli florets
- 1/2 red onion sliced thin, approximately 1 cup
- 3/4 cup golden raisins
- 3/4 cup salted cashews
- 2 tablespoons sesame seeds toasted
Mayo Dressing
- 1 cup mayonnaise approxomately 7.75 oz
- 5 teaspoons seasoned rice vinegar
- 1 1/4 teaspoon ground ginger
- 1/2 teaspoon ground coriander
- 1/4 teaspoon white pepper
Instructions
- Prep Mayo: In a small bowl, add all of the mayo dressing ingredients and whisk until well combined. Set aside.
- Assemble Salad: Add broccoli florets, onion, raisins, and cashews to a large bowl and mix. Add mayo dressing and mix well until it's all well combined.
- Chill: Cover and store in the fridge for at least 1 hour to chill before serving.
- Serve and Enjoy!
