Chicken Burrito Yumm Bowls

A flavor packed burrito bowl inspired by Cafe Yumm!

Equipment

Ingredients

  • 1 lb chicken breasts or 1 large breast halved
  • 1 tablespoons + 2 teaspoons olive oil divided
  • 1 tablespoon + 1 teaspoon taco seasoning divided
  • 1/2 white onion diced
  • 2 cloves fresh garlic minced
  • 1 cup black beans either rinsed canned or dried and cooked
  • 2 cups cooked brown rice
  • 1 cup Roma tomatoes diced
  • 1 avocado sliced or diced
  • 1/4 cup shredded cheddar cheese or more!
  • Copycat Cafe Yumm Sauce
  • fresh cilantro chopped, optional
  • 2 fresh lime wedges optional

Instructions

  • Add 1 tablespoon of olive oil to a small bowl and add 1 tablespoon of taco seasoning. Mix well. Add chicken to the bowl and coat with taco seasoning and oil evenly on both sides of the two pieces. Set aside.
  • Heat a sauté pan to medium and add 1 teaspoon of olive oil. Add onion and garlic and sauté for 1-2 minutes. Add black beans and 1 teaspoon of taco seasoning and sauté for another 3-4 minutes. Remove from pan and set aside.
  • Add 1 more teaspoon of olive oil to sauté pan and add chicken. Cook on medium on one side for 4 minutes, flip and finish cooking on the other side for another 3-4 minutes until internal temperature of the chicken reaches at least 165° F.
  • Meanwhile, add 1 cup of brown rice to each bowl, top each bowl with 1/2 cup of tomatoes, 1/2 of the black bean and onions, 1/8 cup of cheddar cheese, 1/2 avocado.
  • When chicken is done, slice and then add to rice bowls. Drizzle with Copycat Cafe Yumm Sauce and finish with chopped fresh cilantro and a squeeze of fresh lime, if desired.
  • Mix well and enjoy!

Notes

Prepare in Advance
These burrito bowls are perfect for meal prep!  You can prepare it all in advance and either store in the fridge all prepared or store each component and then assemble when ready to enjoy.  Prepared chicken burrito bowls will last up to 4 days in the fridge. 
Storage
Fridge: Store in the fridge for up to 4 days. 
Freezer: Store in the freezer for up to 3 months!  Although we suggest storing without the Yumm Sauce because the texture of the sauce when defrosted is a bit grainy. 
Substitutions
Chicken:  Use your favorite cut (although breasts are the leaner option), or substitute for tofu or tempeh.  
Taco Seasoning: Use your favorite brand, but making your own is so much fun!
Black Beans: Use dried black beans that have been soaked and cooked, or use canned that have been rinsed.  You can also any other bean you have like chickpeas or pinto.
Brown Rice:  You can of course use white rice, too.  To make these bowls in just 20 minutes, you'll want to use premade or minute rice.  If you're going to make the rice at the same time, be sure to start it 30 minutes beforehand. 
Cheese: Use your favorite!  Colby, a Mexican blend, or cotija are great subs.
Copycat Cafe Yumm Sauce:  You can of course buy premade sauce from Cafe Yumm or omit it entirely, however, it's really what ties the whole bowl together. You can also use any of your favorite burrito bowl sauce or our Roasted Tomato Salsa and sour cream!
Skip Sauteing the Beans
You can totally skip this step and just omit the onion and garlic and add the cooked or canned beans as is to the burrito bowl.
Customize
Add your favorites or omit anything you don't like!   Guacamole, corn, and tortilla chips are great additions too!
Tip to Melt Cheese
If you're using premade brown rice (and not fresh made rice coming right out of the pot), give it a quick blitz in the microwave and add the shredded cheese, first and mix. This will ensure that your cheese is all melty in the bowl.
