Inspired by Cafe Yumm, our Chicken Burrito Yumm Bowls put our Copycat Yumm Sauce to delicious use! These rice bowls are topped with fresh veggies and an easy-to-make flavorful chicken, for a healthy, hearty, delicious meal.
They're finally here! After promising them when I created our Copycat Cafe Yumm Sauce, I've finally gotten around to sharing one of my family's favorite easy and delicious rice bowls, these Chicken Burrito Yumm Bowls. Inspired by the bowls at the Pacific Northwest Cafe Yumm, these healthy, hearty bowls are clean eating at its finest. Flavorful chicken, fresh tomatoes, black beans and onion, cheese, and avocado, all on top of a bed of brown rice make them the perfectly well-rounded lunch or dinner.
Ingredients Needed
- Chicken - Chicken breasts are our favorite for this recipe because they're leaner than thighs, but of course, you can use whichever you prefer.
- Cooked Brown Rice - This is a great way to use up some leftover cooked brown rice or meal prep by making a big batch of rice for the week.
- Taco Seasoning - Use your favorite taco seasoning (ours is of course our favorite!) or even a fajita seasoning for your chicken.
- Olive Oil - Butter is of course an option as well.
- Black Beans - Another great meal prep, if using dried black beans. Otherwise, canned is of course a great option, too!
- Onion and Garlic - Staples in our house and in most of our savory recipes!
- Tomatoes, Avocado, and Cilantro - Added freshness!
- Cheddar Cheese - Cheddar is our favorite, but you could use whatever cheese you have/is your favorite. This is also great with a Mexican blend, cotija, and colby.
- Copycat Cafe Yumm Sauce - This is really a key piece to these burrito bowls. Sure, you can totally make them without the sauce and they will still be delish, but this savory flavor-packed sauce is what truly adds the YUM. You can also buy it online, but trust me, it's much more affordable to make it yourself!
Easy to Make
Prep the Beans
First up, a quick saute of the black beans with garlic and onion and just a touch of taco seasoning. Again, these rice bowls are so perfect for meal prep. Saute up a big batch and store it in the fridge for multiple Chicken Burrito Bowls throughout the week!
Cook the Chicken
Next, the chicken. Mix some taco seasoning in with a tablespoon of olive oil and then coat the chicken in it. Saute on the stovetop for a nice juicy flavorful chicken.
Assemble!
While your chicken sizzles on the stovetop, assemble your bowls and then top with sliced chicken and drizzle with that oh-so-delicious Copycat Cafe Yumm Sauce!

Recipe Tips
This recipe is perfect for meal prep! You can prepare all of the components in advance and either assemble together into storage containers for the week or keep each part separate and assemble them when desired, or you can even freeze them!
Nope! If you're using onion and garlic, yes for sure. But you can also just add some cooked black beans (if using dried), or just rinse some black beans from a can and add them to save even more time. You will lose that garlic/onion/taco seasoning flavor these have, but if time is of the essence, you can skip the onion and garlic.
These rice bowls are totally customizable. Use a different cheese or different bean. Add some guacamole instead of cubed avocado. Switch out the diced tomato for some homemade pico de gallo. Add corn, or add some bell pepper into the saute pan with your onions, garlic, and black beans! The possibilities are endless.
You can also serve it with some homemade corn tortilla chips, or heck, skip the bowl part and wrap 'em in a homemade flour tortilla for an absolutely delicious chicken burrito!

Skip the chicken altogether or swap it out for some tofu or tempeh. Or just make it into a big delicious bowl of rice and your favorite veggies topped with the delicious Copycat Cafe Yumm Sauce!

Chicken Burrito Yumm Bowls
Equipment
Ingredients
- 1 lb chicken breasts or 1 large breast halved
- 1 tablespoons + 2 teaspoons olive oil divided
- 1 tablespoon + 1 teaspoon taco seasoning divided
- 1/2 white onion diced
- 2 cloves fresh garlic minced
- 1 cup black beans either rinsed canned or dried and cooked
- 2 cups cooked brown rice
- 1 cup Roma tomatoes diced
- 1 avocado sliced or diced
- 1/4 cup shredded cheddar cheese or more!
- Copycat Cafe Yumm Sauce
- fresh cilantro chopped, optional
- 2 fresh lime wedges optional
Instructions
- Add 1 tablespoon of olive oil to a small bowl and add 1 tablespoon of taco seasoning. Mix well. Add chicken to the bowl and coat with taco seasoning and oil evenly on both sides of the two pieces. Set aside.
- Heat a sauté pan to medium and add 1 teaspoon of olive oil. Add onion and garlic and sauté for 1-2 minutes. Add black beans and 1 teaspoon of taco seasoning and sauté for another 3-4 minutes. Remove from pan and set aside.
- Add 1 more teaspoon of olive oil to sauté pan and add chicken. Cook on medium on one side for 4 minutes, flip and finish cooking on the other side for another 3-4 minutes until internal temperature of the chicken reaches at least 165° F.
- Meanwhile, add 1 cup of brown rice to each bowl, top each bowl with 1/2 cup of tomatoes, 1/2 of the black bean and onions, 1/8 cup of cheddar cheese, 1/2 avocado.
- When chicken is done, slice and then add to rice bowls. Drizzle with Copycat Cafe Yumm Sauce and finish with chopped fresh cilantro and a squeeze of fresh lime, if desired.
- Mix well and enjoy!
