Equipment

Ingredients

  • 2/3 cup extra virgin olive oil
  • 1/3 cup red wine vinegar
  • 2 tablespoons mayonnaise 1 oz
  • 1 teaspoon Dijon mustard
  • 1 1/2 teaspoons Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons Parmesan cheese .25 oz

Notes

This recipe yields just over 1 cup of dressing prepared, 9 oz by weight, and the nutritional value is approximately by weight.
Storage
Store in the fridge in an airtight container for up to 1 week.
Reemulsify
Store in a mason jar or other sealable jar to be able to give the dressing a good shake before using, as the ingredients will separate.
Substitutions
Extra virgin olive oil: You can use another olive oil or neutral oil.
Parmesan Cheese: Romano or Asiago are also great choices.
