Haaaaaaappy New DECADE, friends!! Can you believe it?! 2020 here we GO. Anyone else still feeling the holidays and the end of 2019? I am feeling them HARD. And by hard, I mean elastic waist pants are all I want to be in these days. So bring on the healthy resolution salads, like this Black Bean Quinoa Salad!
Ingredients Needed
- Black beans
- Quinoa
- Fresh red onion
- Fresh English cucumber
- Fresh cherry tomatoes
- Fresh lime juice
SO Fresh (but not the kind like my mom used to tell me I was as a kid... 😛 )
Even better, this salad just couldn't be easier. It's literally throwing it all in a bowl,
and adding a delicious, easy dressing made of olive oil, lime, cumin, and salt.
Give a good mix and you have a solid, healthy, hearty salad that's filling and nutrient rich enough to make a meal! All mixed well together and that's a bowl full of healthy New Year Resolution goodness. Here are some of my other favorite hearty, healthy salads:

Ingredients
Salad
- 1 cup cooked quinoa
- 1 cup black beans, soaked
- 1 cup English cucumbers, chopped
- 1 1/2 cup cherry tomatoes, chopped
- 1/2 cup red onion, diced
- 1/2 cup cilantro, minced
Dressing
- 1/8 cup olive oil
- 3 tablespoons lime juice
- 2 teaspoons ground cumin
- 1 teaspoon kosher salt
Instructions
- In a large bowl, add all salad ingredients.
- In a small bowl, add all dressing ingredients and mix well.
- Add dressing to salad and mix.
- Serve and enjoy!
