Skillet Pizza Dip with Garlic Butter Rolls

The ultimate appetizer and snack! Our Skillet Pizza Dip with Garlic Butter Rolls is an ooey gooey cheesy pizza-inspired dip surrounded by homemade rolls for easy and delicious dipping! It makes a great football-watching or just because party snack!

Pizza! The only thing better is when you can get the same deliciousness in an easy-to-make appetizer. Our Skillet Pizza Dip with Garlic Butter Rolls is a mouthful to say and an even more delicious mouthful of cheesy goodness and homemade rolls. From an easy-to-make garlic roll with an even easier baked gooey dip, this skillet appetizer will be welcome at any party!

Ingredients Needed

  • Flour, Yeast, Butter, Salt, Sugar, and Garlic Powder – For our super easy Garlic Butter Rolls!
  • Pizza SauceWe of course prefer our own homemade sauce, but you can use whatever is your favorite!
  • Cream Cheese Cream cheese makes a great base for any cheesy dip because of its creamy smooth texture that blends well with a lot of other flavors.
  • Mozzarella and Parmesan Cheese – Now for the pizza cheeses!
  • Italian Seasoning, Garlic Powder, and Onion Powder – For the dip and a little bit of garlic powder in those rolls, too!
  • Butter and Fresh Garlic – To coat those rolls with!

Stand Mixer – You can make this dough without a stand mixer and just by using a large spoon or spatula to mix by hand or even with a food processor.
Kitchen Scale – This is probably the most important tool for your kitchen when baking. They’re fairly inexpensive and worth every penny because weighing your ingredients is truly the best way to ensure the most accurate and consistent results when baking.
Cast Iron Skillet – Or your other favorite oven-safe 12″ skillet!
Mixing Bowls – We love these glass mixing bowls and use them for everything!
Pastry Brush – To give those delicious little rolls a brush of butter and garlic!
Oil Spray – Optional, but we love this little oil sprayer to easily coat the cast iron skillet and also our hands when working with the sticky dough.

Easy to Make

Make the Rolls

Of course here at SFS we’ll have a quick and easy homemade roll recipe to include with this delicious dip! Because once you realize how simple it is to make your own, it’s hard to go back! With that said, you can of course also buy a premade roll dough from your grocery store, but homemade will be much more affordable (and better tasting!).

Shape Rolls

Once you have that super easy garlicky dough roll proofed and divided, add them to your favorite oven-safe skillet (we love our cast iron skillet for this!), and let them rise again.

Pro Tip: Dividing and Shaping Rolls

This is when your little little kitchen scale will come in handy! Oh and the little olive oil sprayer. Because this dough is so sticky, we give a little spritz of oil not only on our hands when separating the dough, but also a tiny bit on the top of the kitchen scale so that the balls don’t stick to it, either. For this recipe, just about 2 oz is the size of the dough balls that you’ll want for 8 rolls to surround the dip.

Mix the Dip

While the dough balls rise in the skillet for a second time, mix the dip cheeses and herbs to create the creamy cheesiness of this Skillet Pizza Dip!

Butter!

Once those rolls have been proofed for the second time, it’s time for some melted butter mixed with garlic and Italian seasoning!

Assemble the Dip

Now it’s time to put it all together. Add a big helping of the pizza sauce, then the cheesy mixture, another layer of sauce, some freshly shredded mozzarella, and finally a few slices of your favorite pepperoni.

Pro Tip: Shred the cheese yourself!

While those pre-shredded cheeses are very convenient, when you want the best melty cheese, shred it yourself! This is because those pre-shredded cheeses have anti-clumping agents added to them. So for those epic cheese pulls – buy the block and shred it yourself!

Bake!

Add the cast iron to the oven and bake for our Skillet Pizza Dip with Garlic Butter Rolls!

The rolls are fluffy and flavorful. The dip is a melty cheesy pizza-esque delight. You really don’t get much better than this!

Recipe Tips

Can I use another roll dough?

Of course! I’ve written this recipe with just enough dough for a 12″ skillet to create 8 fluffy rolls, but you can use your favorite store-bought premade roll dough or use about 16-17 oz of your other favorite dough.

Heat the Cream Cheese

To make the cream cheese easier to mix, pop it in the microwave for about 15-20 seconds first to soften it just a bit to make it easier to mix with the other cheeses.

Shred your own cheese!

I know it’s been said (multiple) times in this post, but that’s just how important it is! If you want to best melty cheese, don’t buy pre-shredded!

Ingredients

Garlic Butter Rolls

  • 2 cups all-purpose four 272 g
  • 1/2 cup warm water about 90 degrees
  • 2 1/4 teaspoon instant yeast 10 g
  • 2 tablespoons sugar 8 g
  • 1 egg
  • 1 tablespoon salted butter melted
  • 1/2 teaspoon fine ground salt
  • 1/2 teaspoon garlic powder

Pizza Dip

  • 1 cup pizza sauce
  • 5.6 oz mozzarella cheese 1 3/4 cups, divided
  • 8 oz cream cheese
  • 1.2 oz Parmesan cheese 1/2 cup
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 teaspoons Italian seasoning
  • 6-8 slices pepperoni

Butter Garlic Topping

  • 2 tablespoons salted butter melted
  • 1 teaspoon freshly minced garlic
  • 1 teaspoon Italian seasoning

Instructions

  • Prep Roll Dough: In a medium-sized bowl, add flour, salt, and garlic powder and give a quick mix. In the bowl of a stand mixer, add warm water and sugar and whisk to dissolve the sugar. Add yeast. Add egg and melted butter and mix to break up the egg with the dough hook. Add the flour mixture and mix well until a sticky dough forms.
  • Proof: Add the sticky dough to a lightly oiled large bowl and cover with plastic wrap. Proof until it has doubled in size, about an hour.
  • Form Rolls: Once the dough has been proofed, grease the cast iron (or other) skillet. Separate the dough in half, then those halves in half, and half each again until you have 8 evenly sized dough balls. You can also use a scale (you may want to lightly spritz the top of the scale and your hands with oil to prevent sticking) and weigh out 8 approximately 2 oz dough balls. Add the balls to the greased skillet, around the perimeter of the skillet, leaving a little bit of space for the balls to rise again. Gently cover with a linen towel and let rise for another 30 minutes.
  • Mix Cheeses: Add the cream cheese to a medium-sized bowl and heat in the microwave for 20-30 seconds to soften. Add 1 1/2 cups of mozzarella cheese, Parmesan cheese, 2 teaspoons of Italian seasoning, salt, garlic powder, and onion powder, and mix well.
  • Preheat Oven: Preheat the oven to 350℉ and move the rack to the center.
  • Melt Butter: Add the butter to a small bowl and melt in the microwave. Add the fresh garlic and Italian seasoning and mix well. Once the dough balls have risen and filled the spaces between each other, use a pastry brush to brush the tops of the rolls with the melted butter and garlic.
  • Create the Dip: In the center of the skillet, add half of the pizza sauce and spread in an even layer. Add the cheese mixture and spread in an even layer, then add the rest of the pizza sauce. Top with the remaining 1/4 cup of mozzarella cheese and then layer the pepperoni slices.
  • Bake: Place the cast iron skillet in the oven and bake for 20-22 minutes until the rolls are lightly browned.
  • Serve and Enjoy!

Notes

Make Ahead
Roll Dough/Overnight: Prep the dough and let it proof overnight in the fridge for up to 15 hrs. The next day, shape the rolls in the pan and then give them about 2-3 hrs to rise a second time.
Shaped Rolls/Overnight: Prep the dough, let it rise, and then shape the dough balls and add them to a plate (don’t let them touch), cover, and refrigerate for up to 15 hrs. Remove from the fridge and then place in the greased pan and let rise for the second time 1-2 hrs. 
Roll Dough/Freezer: Prep the dough, let it rise, then shape the balls. Flash freeze by placing them on a plate or tray (not touching), freeze for an hour, and then transfer them to a freezer-safe container or bag. Freeze for up to 3 months. To then use, remove from freezer and arrange in the greased skillet, cover, and let them rise for 4-5 hours before continuing.
Substitutions
Instant Yeast: Use Active Yeast and just give it an extra 10 minutes to activate and become frothy before moving on.
Garlic Powder: You can also use fresh minced garlic in place of the powder. For 1/2 teaspoon dried, use 1/2 tablespoon fresh.
Butter: If using unsalted butter, just add a pinch of fine ground salt.
Pizza Sauce: We love to make our own, but you can use your favorite brand. 
Freshly Grated Cheese
For the best results, freshly grate your own mozzarella and Parmesan cheese from a block. This will produce the best melty cheese!
Customize!
Use your favorite pizza toppings. Instead of pepperoni, use some cooked and crumbled sausage, peppers, onions, tomato and basil, or ham and pineapple.
