Salt and Vinegar Mixed Nuts

It’s the iconic beloved chip flavor, but on healthier, nutrition packed nuts! Our Salt and Vinegar Mixed Nuts have quickly become one of my whole family’s favorite snacks at home or on the go!

We love mixed nuts in my house. They’re a protein, fiber, and healthy fats packed snack that can fuel and satisfy you quickly! While plain roasted and salted nuts are delish, what’s even better (way better IMHO) is when you add the salty, tangy, irresistible flavor of our favorite chip, too! I’ve been testing this one for a while to ensure they have the absolute just-right undeniable flavor, so I am so happy to be able to share with you a new favorite in our house, our Salt and Vinegar Mixed Nuts!

Ingredients Needed

a bowl of mixed nuts, olive oil, and vinegar powder and salt.
  • Mixed Nuts – This can be any combo that you have/want, or it could be all of one nut. You do you, although my personal favorite is almonds and hazelnuts, and my oldest said that her favorite in this mix is the pecans!
  • Olive Oil – Just enough to coat and roast in the oven.
  • Vinegar Powder – If you’ve made our Salt and Vinegar Potato Chips before, then you have some of this around, and these nuts are the perfect way to put it to use in another delicious way!
  • Salt – Fine ground salt is necessary, and even if you have salted nuts, the salt is absolutely necessary to enhance the vinegar powder flavor.

Easy to Make

Roast the nuts

The first step is to give those beautiful nuts a little mix in some olive oil and then roast them. Roasting the nuts not only gives them a delightful added crunch, but it also enhances their flavor!

Season

Once they’re roasted, as soon as they’re out of the oven, season them with the vinegar powder and salt mixture so it coats (and sticks), then let the nuts cool for another 10 minutes.

After the final cool, they’ll be well coated and have an absolutely delicious extra crunch!

Salt and Vinegar Mixed Nuts, done! I recipe tested this one quite a bit to get the right balance of vinegar and salt flavor on these bad boys! The combo of the two – vinegar powder and salt is crucial, and while it may seem like a lot of vinegar powder, trust me, together they make that iconic flavor!

It’s all the flavor you love from Salt and Vinegar Potato Chips, but on some extra crunchy (extra nutritious!) nuts!

Salt and Vinegar Mixed Nuts

Ingredients

  • 16 oz mixed nuts
  • 1 tablespoon olive oil
  • 1.5 tablespoons vinegar powder .5 oz
  • 1 1/4 teaspoon fine ground salt .25 oz

Instructions

  • Preheat Oven: Preheat the oven to 300℉ and line a baking tray with parchment paper.
  • Roast Nuts: Add nuts to a bowl, add olive oil and mix to coat the nuts in the oil. Add the nuts to the parchment paper-lined baking tray, spread in an even layer, and roast in the oven on the middle rack for 20 minutes.
  • Prep Topping: Meanwhile, in a small bowl, add the vinegar powder and the salt and mix. Set aside.
  • Coat Nuts: After 20 minutes of roasting, remove the nuts from the oven and immediately sprinkle on the vinegar and salt powder mixture. Gently turn the nuts on the tray with a spatula (or use the parchment paper to mix/shake), but don't mix too much as the mixture may start to clump.
  • Let Cool: Once coated, let rest and cool for another 10 minutes.
  • Serve and Enjoy or store in an airtight container to enjoy for 2-3 weeks.

Notes

Storage
These nuts will last about 2-3 weeks in an airtight container. But good luck keeping them around that long!
Nut Mixture
We love mixed nuts, but you can also do all almonds or hazelnuts (my favorites) or pecans, walnuts, cashews, whatever your favorites are! Make a mix of your favorites or use whatever you want! 
Seasoning Tips
To avoid clumping of the vinegar powder, don’t overmix the nuts. Sprinkle, turn, and shake the tray; that should give the nuts the best coat. Overmixing or working it all will cause the vinegar powder to clump.
Salt: Be sure to use fine-ground salt that’ll mix well with the vinegar powder.
