Crock Pot Honey Mustard Chicken

Easy, fast, and delicious. Our Crock Pot Honey Mustard Chicken is a simple shredded chicken recipe with a ton of flavor that makes it perfect to serve with rice or potatoes, on salads, or as sliders!

Have I mentioned how “Quick and Easy” is the theme in our house for dinner, lately?  I loved our Crock Pot before, but now, oh now, it’s a lifesaver with crazy busy schedules.  Shout out to all the other working moms out there to little ones, solidarity, sisters!  For those insanely busy weeknights, I got you. Here’s one of our go-to quick and easy favorites, our Crock Pot Honey Mustard Chicken!

Ingredients Needed

  • Boneless chicken breasts – This would also be delicious with boneless chicken thighs.
  • Dijon Mustard – Have you made our homemade Dijon Mustard yet?
  • Chicken Stock – Have you made your own Homemade Chicken Stock yet? You could also use Homemade Vegetable Stock, too.
  • Liquid smoke – Optional but we love the flavor that this adds!
  • Garlic – A staple in most of our chicken recipes.
  • Honey – The honey of the honey mustard!
  • Cumin – It’s subtle but it adds great flavor!
  • Salt and Pepper – To season.
  • Fresh Parsley – To finish with.

Easy to Make

It doesn’t get much easier than add some chicken to a crock pot, season with salt, and then mix the rest of your ingredients together to pour over that chicken.

Then it’s just a matter of letting it slow cook in your crock pot!

Let that crock pot do its thing and once that chicken is done just give it a quick shred and top it with some fresh parsley. That’s it! Crock Pot Honey Mustard Chicken, done.

Recipe Tips

Prep in Advance

This is a great recipe to prep in advance and make this honey mustard chicken even easier! You can prep it all and let it marinate in the fridge over night, or prep the honey mustard sauce up to 3 days in advance before adding it to the chicken.

Shred or Not

We love to shred this chicken in all of that flavorful honey mustard sauce to keep it all nice and juicy, but you could also serve it as whole breasts, too.

Freeze

This is a great recipe to freeze! Cook, shred, cool and then add it to your freezer safe containers and store for up to 4 months.

Equipment

Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 2 teaspoons salt
  • 1/2 cup Dijon mustard
  • 1/3 cup honey
  • 5 garlic cloves minced
  • 1 cup chicken stock
  • 1/2 teaspoon liquid smoke optional
  • 1/2 teaspoon pepper
  • 1 teaspoon cumin

Instructions

  • Prep: Season the chicken breasts with salt and place in the crock pot. Add the remaining ingredients in a medium-sized bowl or pyrex and mix well.
  • Slow Cook: Pour honey mustard mixture over chicken. Cook on high for 4 hrs or low for 8 hrs.
  • Serve: Shred chicken and serve over rice, potatoes, in sliders, or with your favorite sides!

Notes

Storage
Fridge: Store cooked leftover chicken in the fridge for up to 3 days. 
Freezer: Let cool and then store cooked shredded chicken and sauce in freezer-safe containers for up to 4 months.  
Prep in Advance
Prepare in advance by prepping everything and storing it in the fridge overnight.
Prepare the honey mustard sauce up to 3 days in advance.
